本发明涉及一种利于减肥的红枣浓浆及其生产工艺,属于食品加工技术领域。
背景技术
随着人们生活水平的提高,肥胖和超重已经成为成年人和少年儿童的流行病。过多食用精加工的碳水化合物造成能量过剩是引起肥胖的一个重要原因,因为摄入过多的碳水化合物后会转化为脂肪沉积在体内,还会造成血糖升高,增加胰岛的负荷,长期积累将大大增加患2型糖尿病的危险,通过降低碳水化合物在肠道的吸收,达到减少能量吸收的目的是目前研究的热点。而蔗糖的使用由来已久,人们尤其是少年儿童对蔗糖甜味的特有味感依赖性是难以撼动的。如何既保持人们习以为常的蔗糖味道,又受益于功能糖醇低糖、营养等健康新概念,也是困惑食品行业的一个问题。
文献记载,红枣具有补中益气、养胃健脾、养血壮神、润心肺、生津液、悦颜色、解药毒、调和百药的作用;红枣有增强体能、加强肌力的功效。红枣属红色食物,传统中医认为,五脏中的心与五色中的赤相对应,多吃红色食物,可起到养心血,益心气的效果。红色食物多数属低热量食物,并富含膳食纤维、钾等促进新陈代谢、降脂、排便的成分,有助于保护心脑血管。阿胶最早载于《神农本草经》,性味甘平,有滋阴养血,补肺润燥,止血安胎之功效,被称为补血圣药。红枣、阿胶的补血作用为人们所熟知,通过补血而滋润皮肤已是爱美女士们早已公开的秘密。红枣富含的多种维生素及矿物质,再加红枣、阿胶补气补血的特殊作用,也为手术后患者的身体康复提供了强劲动力。随着人们健康意识的增强,天然健康营养系列饮料逐渐收到人们推崇。据有关部门预测,未来五年全球健康饮料将以高于普通饮料增长速度一倍以上的速度增长。红枣含有丰富的营养成份,具有很高的营养保健价值。红枣系列营养饮料的开发具有广阔的市场前景。
本发明克服现有技术不足,以红枣为主要原料,合理配以其它具有健康营养原料,提供一种利于减肥的红枣浓浆及其生产工艺,产品营养丰富、口感纯正、风味独特,为市场提供了一种新型红枣营养饮料新品种。
发明内容
本发明目的在于提供一种利于减肥的红枣浓浆及其生产工艺,营养成分全面、食用方便、易于吸收,利于减肥,并有助于补中益气、美容养颜、延缓衰老等,适合四季冲饮的营养食品。
所述利于减肥的红枣浓浆,含有左旋肉碱0.3%~1.5%、大豆低聚糖0.5%~5%、阿拉伯糖0.5%~5%、牛磺酸0.1%~1.5%,余量为浓缩枣汁,总量为100%;
所述利于减肥的红枣浓浆,还含有荷叶提取物0.1%~0.5%、茶多酚0.01%~0.05%;
所述利于减肥的红枣浓浆,还含有蜂蜜1%~10%、果葡糖浆3%~15%;
所述利于减肥的红枣浓浆,还含有维生素A0.00005%~0.005%和/或维生素C0.05%~0.5%。
所述利于减肥的红枣浓浆,还含有稳定剂:羧甲基纤维素钠(CMC)、黄原胶、β-环状糊精;所述稳定剂用量:羧甲基纤维素钠0.2%~0.5%、黄原胶0.1%~0.5%、β-环状糊精0.5%~2%。
所述稳定剂是在多次试验基础上优选出的,三种稳定剂搭配混合使用,利用胶体间相互协同增效作用,强化了增稠、乳化、稳定、耐酸、耐热作用,可有效防止浓浆分层、水析、沉淀等现象产生,具有稳定、悬浮、改善口感的作用,能有效解决产品的沉淀、析水等质量问题,并且在口感上赋予产品饱满的质感。

所述荷叶提取物可以外购商品化产品,也可以自行制备;
所述荷叶提取物自行制备方法为,
以荷叶为原料,采用超声提取制得;
所述超声提取方法,将荷叶原料粉碎,(过20目筛),加5~10倍水,于85℃~95℃,超声浸提二次,每次1~2h,超声频率60~80khz;将提取液合并,浓缩,干燥(喷雾干燥或真空冻干),而得;
所述浓缩优选采用三效旋转流降膜浓缩,即一效温度控制在90℃~95℃,真空度-0.02Mpa,二效温度控制在80℃~85℃,真空度-0.06Mpa,三效温度控制在55℃~60℃,真空度-0.09Mpa;
传统的热水浸提汁方法由于提取温度较高,提取时间较长,营养成分损失严重,影响了原料营养、风味和药效;超声助提方法能够减少提取时间,提高浸提效率和提取物品质。
本发明所述利于减肥的红枣浓浆生产工艺,包括以下步骤:
(1)调配:
按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸,搅拌均匀,升温至75℃~85℃保持0.5~2h,使充分混匀融合;
搅拌均匀,升温至85℃~95℃保持0.5~2h,使充分混匀融合;
和/或再加入荷叶提取物、茶多酚;和/或再加入蜂蜜、果葡糖浆;和/或再加入维生素A和/或维生素C;和/或再加入稳定剂(羧甲基纤维素钠、黄原胶、β-环状糊精);搅拌均匀,于75℃~85℃保持0.5~1h,使其充分混匀融合;
(2)胶磨:即用胶体磨研磨;
胶磨前最好要确保料液的固形物含量60~70°Bx;调整磨盘刻度到最佳时,开始胶磨;胶磨时,注意调节合适的细度,太粗解决不了问题,太细容易造成液体外溢,不利于生产;一定要调到合适的细度;胶磨完成后,把磨盘调松,用冷水冲洗干净,以备下次使用;浓浆胶磨时主要有两个目的:第一,物料通过胶磨后,浆液内的胶体,在一定外力的作用下,各种小微粒,被磨碎,彼此之间与糖液形成了更加均一,稳定的混合物,起到均质的作用;第二,物料在高速离心作用下,形成了大量的泡沫,有利于浓浆脱气,为后续的静置、减少浓浆气泡奠定了基础;
(3)杀菌;
所述杀菌为将胶磨后浆液升温杀菌,温度80~95℃,时间30~60min;升温杀菌也有利于脱气;
所述杀菌也可以采用超高温瞬时杀菌工艺:温度120~135℃,时间10~30s;
杀菌必要时可加入消泡剂乳化硅油,用量0.3‰~1‰;
(4)静置;
所述静置为杀菌后浆液静置30~35min,最好保持温度90~92℃;罐内的蒸气可从安全阀中放出;
(5)灌装;
所述灌装温度80~85℃;灌装浓度一般70~75%;
(6)冷却;
所述冷却为灌装后浓浆在常温下至少放置15min,然后,再水浴冷却,主要是为避免因浓浆温度太高遇水迅速冷却后,急剧产生泡沫,水浴温度25~30℃;
水浴冷却主要目的:①瓶盖内胶皮垫的抗热性并不是很好,长时间的高温,会使瓶内的胶垫其物理性能有所改变,即对瓶子的气密性有影响,所以要及时降温;②及时降温,会使瓶子内在短时间内形成真空,有效地保证了产品的质量;③水浴冷却时,灌装时瓶子外壁粘有的少量糖液,会在水中溶解,使瓶子外壁保持相对干净,不受微生物的感染;
(7)包装。
所述浓缩枣汁生产方法包括:
原料分选:挑选无虫害、无鼠咬、无霉烂、无变质枣果;把好原料关,是确保产品质量的重要环节;所述枣优选为有机转换红枣;
清洗与浸泡:将枣置40~50℃温水中清洗干净;清洗过程中可进一步挑选去除不合格枣;可选用带有叶轮的清洗缸为清洗设备;所述浸泡为将清洗后枣置40~50℃温水中浸泡10~60min;一般可按干枣∶水=1∶3~10比例进行浸泡;浸泡有益效果:浸泡可使枣果吸水膨胀、软化,有利于提高出汁率;
微波处理:将浸泡处理过的红枣进行微波处理,微波功率为400~800w,时间为1~15min;在微波处理下,红枣细胞组织由于相互间的高速运动和摩擦而破碎,细胞溃解使内容物溢出,从而提高红枣的出汁率;微波处理还可以增加红枣果香和色泽,香味更加浓郁;
浸提:为超声助提,料水比一般为1∶1~10;超声频率40~100khz,优选60~80khz,提取温度85~95℃,时间1~2h;传统的热水浸提枣汁方法由于提取温度较高,提取时间较长,红枣营养成分损失严重,影响了枣汁的营养和风味;超声助提方法能够减少提取时间,提高浸提效率和枣汁品质;
枣汁分离:浸提后趁热过滤,温度优选65~80℃;可选用双联过滤器,80目的过滤网;趁热过滤流速快,解决了因枣汁中果胶等物质含量高,易发生堵塞,造成过滤困难的技术问题;
浓缩:先采用三效旋转流降膜浓缩至30~40°Bx,其中一效温度控制在90~95℃,真空度-0.02Mpa,二效温度控制在80~85℃,真空度-0.06Mpa,三效温度控制在55~60℃,真空度-0.09Mpa;再采用单效浓缩至65°Bx以上,单效浓缩时真空度0.06~0.08MPa;浓缩后得浓缩枣汁;
流体浓缩工艺较多,常见的有常压浓缩、单效或多效升膜浓缩、单效或多效降膜浓缩、膜浓缩、冷冻浓缩等工艺方式,根据红枣汁物料特性和工业化实现的可能性以及综合能耗,选用三效旋转流降膜浓缩工艺及装置,可有效地避免枣汁在浓缩过程中易粘壁焦糊的现象,大大提高了浓缩效率,降低了能源消耗;采用三效旋转流降膜浓缩与单效浓缩相结合的技术方案,可提高枣汁浓度,避免黏糊及糊壁现象,减少浪费,提升枣汁质量。
红枣含有丰富的营养成份,具有补中益气,坚志强力的功效,具有很高的营养保健价值。《神农本草经》记载,枣味甘、性平、无毒,缓和药性,久服轻身延年益寿。《名医别录》记载:“红枣具有补中益气、养胃健脾等作用”。现代研究表明,枣含有丰富的蛋白质、糖类、有机酸、脂肪、多种氨基酸、维生素、微量元素(如铁、锰、锌、钼、铬)、环腺苷酸及生物碱、皂甙、黄酮等有效成份。枣属低热量食物,并富含膳食纤维、钾等促进新陈代谢、降脂、排便的成分,有助于保护心脑血管。此外,红枣作为含铁丰富的食物,其补血补气的作用已为世人所熟知。大枣其可口的酸甜滋味,能缓解常见的恶心、呕吐、食欲不振等现象。红枣具有明显的免疫促进活性。大量药理和临床实验研究表明,多糖类化合物是一种免疫调节剂,能激活免疫细胞,提高机体的免疫功能。大枣所含环腺苷酸(camp)能阻止血小板内血栓素A2的形成,减少血小板的聚集,具有明显的抗血栓形成作用。
膳食纤维:是风靡世界的第七大营养素,它能促进肠蠕动,及时排除有害物质,具有抑制淀粉酶的作用,从而预防便秘、肥胖等,为女性保持窈窕身材的有益营养素,被誉为人体中的“专业清道夫”。枣富含膳食纤维,对清肠通便大有益处,是肠道健康的好伴侣。
左旋肉碱:L-carnitine,又称L-肉碱或音译卡尼丁,化学名称β-羟基γ-三甲铵丁酸,是一种白色晶状体或白色透明细粉,是一种促使脂肪转化为能量的类氨基酸,红色肉类是左旋肉碱的主要来源,对人体无毒副作用。不同类型的日常饮食已经含有5-100毫克的左旋肉碱,但一般人每天只能从膳食中摄入50毫克,素食者摄入更少。左旋肉碱的主要生理功能是促进脂肪转化成能量,服用左旋肉碱能够在减少身体脂肪、降低体重的同时,不减少水分和肌肉,在2003年被国际肥胖健康组织认定为最安全无副作用的减肥营养补充品。目前左旋肉碱已应用于医药、保健和食品等领域,并已被瑞士、法国、美国和世界卫生组织规定为法定的多用途营养剂。我国食品添加剂卫生标准GB2760-1996规定了左旋肉碱酒石酸盐为食品营养强化剂,可应用于咀嚼片、饮液、胶囊、乳粉及乳饮料等。左旋肉碱是脂肪代谢过程中的一种关键的物质,能够促进脂肪酸进入线粒体氧化分解。可以说肉毒碱是转运脂肪酸的载体。在长时间大强度运动中,肉毒碱提高了脂肪的氧化速率,减少了糖原的消耗,同时也延缓了疲劳。目前人们已把肉碱应用于大众减肥、竞技运动员减脂抗疲劳,经多年观察,效果明显。适当补充左旋肉碱,让脂肪及时燃烧,健康、苗条,拥有迷人的身材。左旋肉碱作为脂肪酸β-氧化的关键物质,能够在机体内除去多余的脂肪及其他脂肪酸的残留物,使细胞内的能量得到平衡。左旋肉碱在减肥过程中真正达到了世界卫生组织(WHO)所规定的健康减肥三大标准:不厌食、不腹泻、不乏力。食品及医药领域应用:增强耐力,提高运动成绩;有利于心脏和血管的保健;有利于消除脂肪肝;促进疲劳恢复;延缓衰老过程;有利于婴儿健康;治疗失血性休克等。
大豆低聚糖:是大豆中可溶性糖质的总称,主要成分是指单糖数为3~4的蔗糖(双糖)、棉子糖(三糖)和水苏糖(四糖)等。成熟后的大豆约含有10%低聚糖。大豆低聚糖是一种低甜度、低热量的甜味剂,其甜度为蔗糖的70%,其热量是每克8.36千焦耳,仅是蔗糖热能的1/2,而且安全无毒。大豆低聚糖可代替部分蔗糖作为低热量甜味剂。大豆低聚糖的保温、吸湿性比蔗糖小,但优于果葡糖浆。水分活性接近蔗糖,可用于清凉饮料和焙烤食品,也可用于降低水分活性、抑制微生物繁殖,还可达到保鲜,保湿的效果。大豆低聚糖糖浆外观为无色透明的液糖,黏度比麦芽糖低、异构糖高。在酸性条件下加热处理时,比果糖、低聚糖和蔗糖稳定,一般加热至140℃时才开始热析,可用于需要进行加热杀菌的酸性食品。它的保健功能主要有:1.通便洁肠;2.促进肠道内双歧杆菌增殖;3.降低血清胆固醇;4.和保护肝脏;长期摄入大豆低聚糖能减少体内有毒代谢物质产生,减轻丁肝脏解毒的负担,所以在防治肝炎和预防肝硬化方面也有一定的作用;5.抑制肠内腐败物质的生成。
阿拉伯糖:又被称为L(+)-树胶醛糖、L(+)-阿戊糖、果胶糖等,英文名称为L-Arabinose。广泛存在于植物中,通常与其他单糖结合,以杂多糖的形式存在于胶体、半纤维素、果胶酸、细菌多糖及某些糖苷中。获得L-阿拉伯糖的主要途径是通过植物提取的方法。近年来科学家和营养学家就L-阿拉伯糖(L-Arabinose)在肠道内对糖类代谢的作用作了大量的研究工作:临床试验表明L-阿拉伯糖对蔗糖的代谢转化具有阻断作用,使其在减肥、控制糖尿病等方面的应用前景看好。美国医疗协会也将L-阿拉伯糖列入抗肥胖剂的营养补充剂或非处方药。2008年我国卫生部第12号公告批准L-阿拉伯糖为新资源食品,使用范围为“各类食品,但不包括婴幼儿食品”。生理功能:能抑制水解双糖的酶,即简称抑制双糖水解的降糖作用;因L-阿拉伯糖对双糖水解酶的抑制作用,使在小肠里没被分解的蔗糖在大肠里被微生物分解产生出大量的有机酸,这种有机酸对肝脏合成脂肪有抑制作用,再加上L-阿拉伯糖在小肠里对吸收蔗糖的抑制作用,从而减少体内新脂肪的产生。L-阿拉伯糖可以与蔗糖配伍使用也可单独食用。在蔗糖中加入3.5%的比例,能够抑制人体60-70%蔗糖的吸收,长期使用可以降低血糖。单独食用L-阿拉伯糖,效果相同;抑制蔗糖的代谢与吸收;控制血糖升高,抑制脂肪生成;预防便秘,促进双歧杆菌生长;对骨骼肌成分的影响。
牛磺酸:牛磺酸具有多种生理功能,是人体健康必不可少的一种营养素。主要生理功能:促进婴幼儿脑组织和智力发育,牛磺酸在脑内的含量丰富、分布广泛,能明显促进神经系统的生长发育和细胞增殖、分化,且呈剂量牛磺酸依赖性,在脑神经细胞发育过程中起重要作用。研究表明:早产儿脑中的牛磺酸含量明显低于足月儿,这是因为早产儿体内的半肤氨酸亚磺酸脱氢酶(CSAD)尚未发育成熟,合成牛磺酸不足以满足机体的需要,需由母乳补充。母乳中的牛磺酸含量较高,尤其初乳中含量更高。如果补充不足,将会使幼儿生长发育缓慢、智力发育迟缓。牛磺酸与幼儿、胎儿的中枢神经及视网膜等的发育有密切的关系,长期单纯的牛奶喂养,易造成牛磺酸的缺乏;提高神经传导和视觉机能;防止心血管病;影响脂类的吸收;改善内分泌状态,增强人体免疫;影响糖代谢;改善记忆的功能;牛磺酸防治缺铁性贫血有明显效果,它不仅可以促进肠道对铁的吸收,还可增加红细胞膜的稳定性;牛磺酸还是人体肠道内双歧菌的促生因子,优化肠道内细菌群结构;还具有抗氧化、延缓衰老作用。
荷叶:为睡莲科植物莲Nelumbo nuciferaGaertn.的干燥叶。荷叶味苦辛微涩、性凉,归心、肝、脾经;清香升散;具有消暑利湿,健脾升阳,散瘀止血的功效。主治暑热烦渴,头痛眩晕,水肿,食少腹胀,泻痢,白带,脱肛,吐血,衄血,咯血,便血,崩漏,产后恶露不净,损伤瘀血。荷叶含有莲碱(Roemerine)、原荷叶碱(Pronuciferine)和荷叶碱(Nuciferine)等多种生物碱及维生素C、多糖。有清热解毒、凉血、止血的作用。结果表明,荷叶有降血脂作用。荷叶碱是荷叶中提取的生物碱,荷叶碱可扩张血管,清热解暑,有降血压的作用,同时还是减肥的良药。有资料报道,荷叶中的生物碱有降血脂作用,且临床上常用于肥胖症的治疗。荷叶减肥原理,即服用后在人体肠壁上形成一层脂肪隔离膜,有效阻止脂肪的吸收,从根本上减重,并更有效的控制反弹。荷叶是“药食两用”的食物,荷叶中富含的黄酮类物质,是大多数氧自由基的清除剂,可以提高SOD(超氧化物歧化酶)的活力,减少MDA(脂质过氧化物丙二醛)及0X-LDL(氧化低密度脂蛋白)的生成,它可以增加冠脉流量,对实验性心肌梗塞有对抗作用;对急性心肌缺血有保护作用;对治疗冠心病、高血压等有显著效果;对降低舒张压,防治心律失常、心血管病等也起重要作用,因此荷叶黄酮是一类极有价值和待开发的物质,它既可作为心血管疾病的原料药,还可广泛应用于功能食品、保健食品和饮料中。此外,荷叶中另一大类活性物质oslim花草的生物碱,生理活性显著,具有明显的降血脂、抗病毒等功效。
茶多酚:Tea Polyphenols,是茶叶中多酚类物质的总称,包括黄烷醇类、花色苷类、黄酮类、黄酮醇类和酚酸类等。其中以黄烷醇类物质(儿茶素)最为重要。茶多酚又称茶鞣或茶单宁,是形成茶叶色香味的主要成份之一,也是茶叶中有保健功能的主要成份之一。日本千叶大学山下泰德教授等科学家研究表明,茶多酚等活性物质具解毒和抗辐射作用,能有效地阻止放射性物质侵入骨髓,并可使锶90和钴60迅速排出体外,被健康及医学界誉为“辐射克星”。茶多酚是从茶叶中提取的全天然抗氧化食品,具有抗氧化能力强,无毒副作用,无异味等特点。药理作用:1、抗癌;2、防治心血管疾病,①降血脂、预防肝脏及冠状动脉粥样硬化;②降血压;③降血糖;④防治脑中风;3、提高人体的综合免疫能力,①通过调节免疫球蛋白的活性,间接实现提高人体综合免疫能力、抗风湿因子、抗菌抗病毒的功效;②抗变态反应和皮肤过敏反应;③舒缓肠胃紧张、止泻和利尿;④促进Vc的吸收,防治坏血病;4、其它保健治疗功效,①抗脂质过氧化,预防衰老;②对重金属盐和生物碱中毒的抗解作用;③防辐射损伤,减轻放疗的不良反应;④防龋固齿和清除口臭的作用;⑤助消化作用;⑥有助于美容护肤。
维生素A:又称视黄醇(其醛衍生物视黄醛)是一个具有酯环的不饱和一元醇。生理功能:1)维持正常视觉功能;2)维护上皮组织细胞的健康;3)维持骨骼正常生长发育;4)促进生长与生殖;5)其他:近年发现维生素A酸(视黄酸)类物质有延缓或阻止癌前病变,防止化学致癌剂的作用,特别是对于上皮组织肿瘤,临床上作为辅助治疗剂已取得较好效果。β-胡萝卜素具有抗氧化作用,近年来有大量报道,是机体一种有效的捕获活性氧的抗氧化剂,对于防止脂质过氧化,预防心血管疾病、肿瘤,以及延缓衰老均有重要意义。维生素A对于机体免疫功能有重要影响,缺乏时,细胞免疫呈现下降。
维生素C:又叫L-抗坏血酸,是一种水溶性维生素。食物中的维生素C被人体小肠上段吸收。一旦吸收,就分布到体内所有的水溶性结构中。功效:胶原蛋白的合成;治疗坏血病;预防牙龈萎缩、出血;预防动脉硬化;抗氧化剂;防癌;保护细胞、解毒,保护肝脏;提高人体的免疫力;提高机体的应急能力等。
本发明精选左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸等原料,和/或配合荷叶提取物、茶多酚、蜂蜜、果葡糖浆、维生素A、维生素C、稳定剂;等原料,以药食同源的浓缩枣汁为载体,合理搭配组方,各原料之间相互协调、协同作用,研制开发出即营养全面、功能协调,具有很好适口性,服用方便,利于吸收,利于减肥,并有助于补中益气、美容养颜、益气生津、清热解毒、健脾益胃、调理肠胃、敛肺滋阴、提高机体免疫力、延缓衰老、促进疲劳恢复等效果的红枣浓浆新产品。
本发明特别地解决了现有浓浆类似相关产品由于原料或配伍不当,产品疗效和口感不佳,没有全面考虑产品营养性与适口性等问题。本发明产品便于服用、便于携带、即冲即饮、利于吸收。长期食用本发明红枣浓浆有利于提高机体营养水平,有利于提高人口素质。
本发明红枣浓浆产品食用方法:即可以直接食用,也可根据个人需求用冷、热开水冲调,或加入到牛奶、奶茶等中食用。推荐日食用量10~120g。
具体实施方式
以下实施例对本发明做进一步的说明。
实施例1
浓缩枣汁生产方法包括:
原料分选:挑选无虫害、无鼠咬、无霉烂、无变质枣果;
清洗与浸泡:将枣置40~50℃温水中清洗干净;清洗过程中可进一步挑选去除不合格枣;可选用带有叶轮的清洗缸为清洗设备;将清洗后枣置40~50℃温水中浸泡30min;可按干枣∶水=1∶10比例进行浸泡;
微波处理:将浸泡处理过的红枣进行微波处理,微波功率为600w,时间为10min;
浸提:为超声助提,料水比为1∶10;超声频率80khz,提取温度85~95℃,时间1h;
枣汁分离:浸提后趁热过滤,温度优选65~80℃;可选用双联过滤器,80目的过滤网;浓缩:先采用三效旋转流降膜浓缩至30~35°Bx,其中一效温度控制在90~95℃,真空度-0.02Mpa,二效温度控制在80~85℃,真空度-0.06Mpa,三效温度控制在55~60℃,真空度-0.09Mpa;再采用单效浓缩至65°Bx以上,单效浓缩时真空度0.06~0.08MPa;浓缩后得浓缩枣汁。
荷叶提取物制备方法:将荷叶原料粉碎,(过20目筛),加10倍水,于85℃超声浸提二次,每次2h,超声频率60khz;将提取液合并,浓缩(优选采用三效旋转流降膜浓缩,即一效温度控制在90℃~95℃,真空度-0.02Mpa,二效温度控制在80℃~85℃,真空度-0.06Mpa,三效温度控制在55℃~60℃,真空度-0.09Mpa),真空冻干,而得;
实施例2
浓缩枣汁生产方法包括:
原料分选:挑选无虫害、无鼠咬、无霉烂、无变质枣果;
清洗与浸泡:将枣置40~45℃温水中清洗干净;清洗过程中可进一步挑选去除不合格枣;可选用带有叶轮的清洗缸为清洗设备;将清洗后枣置40~50℃温水中浸泡30min;可按干枣∶水=1∶10比例进行浸泡;
微波处理:将浸泡处理过的红枣进行微波处理,微波功率为600w,时间为10min;
浸提:为超声助提,料水比为1∶8;超声频率80khz,提取温度85~95℃,时间1h;
枣汁分离:浸提后趁热过滤,温度优选65~80℃;可选用双联过滤器,80目的过滤网;浓缩:先采用三效旋转流降膜浓缩至30~35°Bx,其中一效温度控制在90~95℃,真空度-0.02Mpa,二效温度控制在80~85℃,真空度-0.06Mpa,三效温度控制在55~60℃,真空度-0.09Mpa;再采用单效浓缩至65°Bx以上,单效浓缩时真空度0.06~0.08MPa;浓缩后得浓缩枣汁。
荷叶提取物制备方法:将荷叶原料粉碎,(过20目筛),加8倍水,于90℃超声浸提二次,每次1.5h,超声频率80khz;将提取液合并,浓缩(即三效旋转流降膜浓缩,即一效温度控制在90℃~95℃,真空度-0.02Mpa,二效温度控制在80℃~85℃,真空度-0.06Mpa,三效温度控制在55℃~60℃,真空度-0.09Mpa),喷雾干燥,而得;
实施例3
一种利于减肥的红枣浓浆,含有左旋肉碱0.3%、大豆低聚糖5%、阿拉伯糖2%、牛磺酸0.5%,余量为浓缩枣汁,总量为100%。
一种利于减肥的红枣浓浆生产工艺,包括以下步骤:
(1)调配:按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸搅拌均匀,升温至85℃~95℃保持2h,使充分混匀融合;
(2)胶磨:用胶体磨研磨;胶磨前最好要确保料液的固形物含量70~75°Bx;调整磨盘刻度到最佳时,开始胶磨;胶磨完成后,把磨盘调松,用冷水冲洗干净,以备下次使用;
(3)杀菌:将胶磨后浆液升温杀菌,温度80~95℃,时间30~60min;
所述杀菌也可以采用超高温瞬时杀菌工艺:温度120~135℃,时间10~30s;
杀菌必要时可加入消泡剂乳化硅油,用量0.3‰~1‰;
(4)静置:杀菌后浆液静置30~35min,最好保持温度90~92℃;罐内的蒸气可从安全阀中放出;
(5)灌装:灌装温度80~85℃;灌装浓度一般70~75%;
(6)冷却:灌装后浓浆在常温下至少放置15min,然后,再水浴冷却,水浴温度25~30℃;
(7)包装。
实施例4
一种利于减肥的红枣浓浆,含有左旋肉碱1.5%、大豆低聚糖0.5%、阿拉伯糖5%、牛磺酸1.0%、蜂蜜6%、果葡糖浆9%,余量为浓缩枣汁,总量为100%。
一种利于减肥的红枣浓浆生产工艺,包括以下步骤:按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸搅拌均匀,升温至85℃~95℃保持2h,使充分混匀融合;再加入蜂蜜、果葡糖浆;搅拌均匀,于75℃~80℃保持1h,使其充分混匀融合;其余步骤同实施例3。
实施例5
一种利于减肥的红枣浓浆,含有左旋肉碱1.0%、大豆低聚糖1.5%、阿拉伯糖2.3%、牛磺酸1.0%、荷叶提取物0.1%、茶多酚0.05%、蜂蜜3%、果葡糖浆10%,余量为浓缩枣汁,总量为100%;
一种利于减肥的红枣浓浆生产工艺,包括以下步骤:按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸搅拌均匀,升温至85℃~95℃保持2h,使充分混匀融合;再加入荷叶提取物、茶多酚、蜂蜜、果葡糖浆;搅拌均匀,于80℃~85℃保持0.5h,使其充分混匀融合;其余步骤同实施例3。
实施例6
一种利于减肥的红枣浓浆,含有左旋肉碱1.5%、大豆低聚糖1.0%、阿拉伯糖1.5%、牛磺酸1.2%、荷叶提取物0.5%、茶多酚0.01%、蜂蜜8%、果葡糖浆8%,余量为浓缩枣汁,总量为100%;

实施例7
一种利于减肥的红枣浓浆,含有左旋肉碱1.5%、大豆低聚糖1.0%、阿拉伯糖1.5%、牛磺酸1.2%、荷叶提取物0.5%、茶多酚0.01%、蜂蜜8%、果葡糖浆8%、维生素A 0.005%和/或维生素C 0.05%,余量为浓缩枣汁,总量为100%。
一种利于减肥的红枣浓浆生产工艺,包括以下步骤:按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸搅拌均匀,升温至85℃~95℃保持2h,使充分混匀融合;再加入荷叶提取物、茶多酚、蜂蜜、果葡糖浆、维生素A和/或维生素C;搅拌均匀,于80℃~82℃保持1h,使其充分混匀融合;其余步骤同实施例3。
实施例8
一种利于减肥的红枣浓浆,含有左旋肉碱0.8%、大豆低聚糖3.0%、阿拉伯糖2.5%、牛磺酸0.3%、荷叶提取物0.2%、茶多酚0.02%、蜂蜜8%、果葡糖浆15%、羧甲基纤维素钠0.3%、黄原胶0.5%、β-环状糊精1%,余量为浓缩枣汁,总量为100%。
一种利于减肥的红枣浓浆生产工艺,包括以下步骤:按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸搅拌均匀,升温至85℃~95℃保持2h,使充分混匀融合;再加入荷叶提取物、茶多酚、蜂蜜、果葡糖浆、羧甲基纤维素钠、黄原胶、β-环状糊精;搅拌均匀,于78℃~80℃保持1h,使其充分混匀融合;其余步骤同实施例3。
实施例9
一种利于减肥的红枣浓浆,含有左旋肉碱1.0%、大豆低聚糖1.5%、阿拉伯糖1.0%、牛磺酸0.8%、羧甲基纤维素钠0.5%、黄原胶0.1%、β-环状糊精2%,余量为浓缩枣汁,总量为100%。
一种利于减肥的红枣浓浆生产工艺,包括以下步骤:按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸搅拌均匀,升温至85℃~95℃保持2h,使充分混匀融合;再加入蜂蜜、果葡糖浆、羧甲基纤维素钠、黄原胶、β-环状糊精;搅拌均匀,于75℃~80℃保持1h,使其充分混匀融合;其余步骤同实施例3。
实施例10
一种利于减肥的红枣浓浆,含有左旋肉碱1.0%、大豆低聚糖1.5%、阿拉伯糖2.3%、牛磺酸1.0%、荷叶提取物0.1%、茶多酚0.05%、蜂蜜3%、果葡糖浆10%、羧甲基纤维素钠0.2%、黄原胶0.5%、β-环状糊精0.5%,,余量为浓缩枣汁,总量为100%;
一种利于减肥的红枣浓浆生产工艺,包括以下步骤:按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸搅拌均匀,升温至85℃~95℃保持2h,使充分混匀融合;再加入荷叶提取物、茶多酚、蜂蜜、果葡糖浆、羧甲基纤维素钠、黄原胶、β-环状糊精,搅拌均匀,于80℃~82℃保持1h,使其充分混匀融合;其余步骤同实施例3。
实施例11
一种利于减肥的红枣浓浆,含有左旋肉碱1.5%、大豆低聚糖1.0%、阿拉伯糖1.5%、牛磺酸1.2%、荷叶提取物0.5%、茶多酚0.01%、蜂蜜8%、果葡糖浆8%、羧甲基纤维素钠0.3%、黄原胶0.2%、β-环状糊精1.5%、维生素A0.005%和/或维生素C0.05%,余量为浓缩枣汁,总量为100%。
一种利于减肥的红枣浓浆生产工艺,包括以下步骤:按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸搅拌均匀,升温至85℃~95℃保持2h,使充分混匀融合;再加入荷叶提取物、茶多酚、蜂蜜、果葡糖浆、羧甲基纤维素钠、黄原胶、β-环状糊精、维生素A和/或维生素C;搅拌均匀,于80℃~82℃保持1h,使其充分混匀融合;其余步骤同实施例3。
Claims (8)
1.一种利于减肥的红枣浓浆,其特征在于,含有左旋肉碱0.3%~1.5%、大豆低聚糖0.5%~5%、阿拉伯糖0.5%~5%、牛磺酸0.1%~1.5%,余量为浓缩枣汁,总量为100%。
2.根据权利要求1所述利于减肥的红枣浓浆,其特征在于,还含有荷叶提取物0.1%~0.5%、茶多酚0.01%~0.05%。
3.根据权利要求1或2所述利于减肥的红枣浓浆,其特征在于,还含有蜂蜜1%~10%、果葡糖浆3%~15%。
4.根据权利要求1或2所述利于减肥的红枣浓浆,其特征在于,还含有维生素A0.00005%~0.005%和/或维生素C0.05%~0.5%。
5.根据权利要求1或2所述利于减肥的红枣浓浆,其特征在于,还含有稳定剂:羧甲基纤维素钠(CMC)、黄原胶、β-环状糊精;所述稳定剂用量:羧甲基纤维素钠0.2%~0.5%、黄原胶0.1%~0.5%、β-环状糊精0.5%~2%。
6.根据权利要求1至5任一所述利于减肥的红枣浓浆生产工艺,包括以下步骤:
(1)调配:
按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入左旋肉碱、大豆低聚糖、阿拉伯糖、牛磺酸,搅拌均匀,升温至75℃~85℃保持0.5~2h,使充分混匀融合;
搅拌均匀,升温至85℃~95℃保持0.5~2h,使充分混匀融合;和/或再加入荷叶提取物、茶多酚;和/或再加入蜂蜜、果葡糖浆;和/或再加入维生素A和/或维生素C;和/或再加入稳定剂(羧甲基纤维素钠、黄原胶、β-环状糊精);搅拌均匀,于75℃~85℃保持0.5~1h,使其充分混匀融合;
(2)胶磨:用胶体磨研磨;胶磨前最好要确保料液的固形物含量70~75°Bx;调整磨盘刻度到最佳时,开始胶磨;胶磨完成后,把磨盘调松,用冷水冲洗干净,以备下次使用;
(3)杀菌:将胶磨后浆液升温杀菌,温度80~95℃,时间30~60min;
所述杀菌也可以采用超高温瞬时杀菌工艺:温度120~135℃,时间10~30s;
杀菌必要时可加入消泡剂乳化硅油,用量0.3‰~1‰;
(4)静置:杀菌后浆液静置30~35min,最好保持温度90~92℃;罐内的蒸气可从安全阀中放出;
(5)灌装:灌装温度80~85℃;灌装浓度一般70~75%;
(6)冷却:灌装后浓浆在常温下至少放置15min,然后,再水浴冷却,水浴温度25~30℃;
(7)包装。
7.根据权利要求6所述利于减肥的红枣浓浆生产工艺,其特征在于,所述荷叶提取物制备方法为,将荷叶原料粉碎,(过20目筛),加5~10倍水,于85℃~95℃,超声浸提二次,每次1~2h,超声频率60~80khz;将提取液合并,浓缩,干燥(喷雾干燥或真空冻干),而得。
8.根据权利要求7所述利于减肥的红枣浓浆生产工艺,其特征在于,所述浓缩优选采用三效旋转流降膜浓缩,即一效温度控制在90℃~95℃,真空度-0.02Mpa,二效温度控制在80℃~85℃,真空度-0.06Mpa,三效温度控制在55℃~60℃,真空度-0.09Mpa。
