Abstract
一种柠檬菊花茶饮料及其制备方法。其中柠檬菊花茶饮料由下列组分组成:5-30%柠檬汁、1-2%菊花粉、1-5%绿茶粉、3-5%白砂糖、0.01-0.07%黄原胶、0.03%山梨酸钾和余量饮用水。本发明提供的柠檬菊花茶饮料是以柠檬、菊花和绿茶作为主要原料而制成,其不仅富含多种对人体有益的营养成分,口感好,而且不受水果收获季节的限制,所以消费者可以常年食用,因此市场应用前景十分广阔。另外,本制备方法简单、操作方便。
Description
技术领域
本发明属于食品技术领域,特别是涉及一种柠檬菊花茶饮料及其制备方法。
背景技术
柠檬是芸香科柑桔属的常绿小乔木,果实为柑果,黄色而有光泽,椭圆形,主要为榨汁用,有时也用做烹饪调料,但基本不用作鲜食,因为太酸。其果实中含有5%的柠檬酸。每升柠檬汁中含501.6毫克的维生素C和49.88克的柠檬酸。
柠檬是世界上最有药用价值的水果之一,其富含维生素C、柠檬酸、苹果酸、高量钾元素和低量钠元素等,对人体十分有益。其还具有预防感冒、刺激造血、抗癌和美容等作用。柠檬中含有柠檬酸、苹果酸等有机酸和橙皮甙、柚皮甙、圣草次甙等黄酮甙,还含有维生素C、B1、B2和烟酸、糖类、钙、磷、铁等多种营养成分,以及香豆精类、谷甾醇类、挥发油等物质。其所含的成分除可提供营养素外,还可促进胃中蛋白质分解酶的分泌,增加胃肠蠕动,有助于消化吸收。柠檬汁有很强的杀菌作用和抑制子宫收缩的功能,并能降低血脂。其还具有美容作用,可防止和消除皮肤色素沉淀,使肌肤光洁柔嫩。
绿茶是将采摘来的鲜叶先经高温杀青,杀灭了各种氧化酶,保持茶叶绿色,然后经揉捻、干燥而制成。绿茶中维生素C含量很丰富,就其绝对含量而言,优质的绿茶维生素C的含量比柠檬、桔子、番茄要高出一,二倍,并且茶中的维生素C在90度的温度下也几乎不被破坏。
绿茶的功效:1.绿茶所含的抗氧化剂有助于抵抗老化。2.绿茶中儿茶素对引起人体致病的部分细菌有抑制效果,同时又不致伤害肠内有益菌的繁衍,因此绿茶具备整肠的功能。3.绿茶含有黄酮醇类,有抗氧化作用,亦可防止血液凝块及血小板成团,降低心血管疾病。4.绿茶含有茶碱及咖啡因,可以经由许多作用活化蛋白质激酶及三酸甘油酯解脂酶,减少脂肪细胞堆积,因此达到减肥功效。5.绿茶中含有氟,其中儿茶素可以抑制生龋菌作用,减少牙菌斑及牙周炎的发生。绿茶中所含的单宁酸具有杀菌作用,能阻止食物渣屑繁殖细菌,故可以有效防止口臭。6.绿茶对某些癌症有抑制作用,并且绿茶中的儿茶素类物质能抗UV-B所引发之皮肤癌。7.近年的研究报告显示,绿茶能够帮助改善消化不良的情况,比如由细菌引起的急性腹泻,可喝一点绿茶减轻病况。
菊花性微寒,味甘苦;入肺、肝经,具有疏散风热、清肝明目、清热解毒之功效,主治头痛、眩晕、目赤、心胸烦热、疗疮、肿毒等病症。
菊花的营养成分为:每100克菊花中含水分27.4克,蛋白质3.2克,脂肪3.2克,碳水化合物44.4克,硫胺素0.04毫克,核黄素0.23毫克,维生素E13.92毫克,钾79毫克,钠6.2毫克,钙78毫克,铁2.9毫克,磷50毫克。此外,还含有挥发油(主要含龙脑、菊油环酮)、胆碱、水苏碱。菊甙、黄酮类、氨基酸、维生素等。
菊花的食疗作用有:1.疏散风热,清肝明目:菊花甘苦微寒,甘而不腻,苦而不燥,是治疗外感风热,目赤肿痛的常用佳品。2.平肝潜阳,防治心血管病:研究发现,菊花能镇静、降压,扩张冠状动脉,增加冠状动脉血流量,对冠心病、高血压及动脉硬化症有较好的食疗作用。3.抗菌消炎:菊花所含的黄酮具有较强的杀菌作用,对热毒疮疡,红肿热痛有一定疗效。4.延缓衰老:菊花是一种神经强壮剂,可增强毛细血管抵抗力,古人称之“染鬚发令黑”,是一种抗衰老、强体力的药食两用之品。
虽然上述三种物质具有丰富的营养,但是,由于柠檬属于水果类物质,绿茶属于饮品,菊花则属于饮品和药品,所以习惯上消费者很少同时食用。加之受柠檬收获季节性的限制,因此很难长期保存,所以消费者不能常年食用。
发明内容
为了解决上述问题,本发明的目的在于提供一种消费者可以常年食用,并且营养丰富的柠檬菊花茶饮料及其制备方法。
为了达到上述目的,本发明提供的柠檬菊花茶饮料由以重量百分比计的下列组分组成:
本发明提供的柠檬菊花茶饮料制备方法包括按顺序进行的下列步骤:
1)将菊花、绿茶分别用开水烫熟后采用冷冻干燥技术制成菊花粉和绿茶粉;
2)将柠檬去皮、去核并洗净后制成柠檬汁,然后按照上述加入量称取柠檬汁并用适量水稀释,之后用120目筛过滤后备用;
3)将按照上述加入量称取的白砂糖用适量水溶解,之后用120目筛过滤后备用;
4)将按照上述加入量称取的黄原胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
5)将按照上述加入量称取的菊花粉、绿茶粉和柠檬汁混合均匀;
6)将上述制成的菊花粉、绿茶粉和柠檬汁混合物、白砂糖水、黄原胶浆以及按照上述加入量称取的山梨酸钾加入到调配罐中,加入余量的饮用水定容并搅拌均匀,用柠檬酸、苹果酸或柠檬酸钠、碳酸氢钠将溶液PH调至4.8±0.1,由此制成柠檬菊花茶饮料;
7)将上述柠檬菊花茶饮料在135℃的温度下采用UHT方法灭菌5秒,然后无菌灌装,或灌装后在85-90℃的温度下灭菌15分钟,由此即可完成整个柠檬菊花茶饮料的制备过程。

3)将3公斤白砂糖用适量水溶解,之后用120目筛过滤后备用;
4)将0.01公斤黄原胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
5)将1公斤菊花粉、1公斤绿茶粉和柠檬汁混合均匀;
6)将上述制成的菊花粉、绿茶粉和柠檬汁混合物、白砂糖水、黄原胶浆以及0.03公斤山梨酸钾加入到调配罐中,加入余量的饮用水定容至100公斤并搅拌均匀,用柠檬酸、苹果酸或柠檬酸钠、碳酸氢钠将溶液PH调至4.8±0.1,由此制成柠檬菊花茶饮料;

4)将0.07公斤黄原胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
5)将2公斤菊花粉、5公斤绿茶粉和柠檬汁混合均匀;
6)将上述制成的菊花粉、绿茶粉和柠檬汁混合物、白砂糖水、黄原胶浆以及0.03公斤山梨酸钾加入到调配罐中,加入余量的饮用水定容至100公斤并搅拌均匀,用柠檬酸、苹果酸或柠檬酸钠、碳酸氢钠将溶液PH调至4.8±0.1,由此制成柠檬菊花茶饮料;

3)将4公斤白砂糖用适量水溶解,之后用120目筛过滤后备用;
4)将0.03公斤黄原胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
5)将1.5公斤菊花粉、3公斤绿茶粉和柠檬汁混合均匀;
6)将上述制成的菊花粉、绿茶粉和柠檬汁混合物、白砂糖水、黄原胶浆以及0.03公斤山梨酸钾加入到调配罐中,加入余量的饮用水定容至100公斤并搅拌均匀,用柠檬酸、苹果酸或柠檬酸钠、碳酸氢钠将溶液PH调至4.8±0.1,由此制成柠檬菊花茶饮料;
7)将上述柠檬菊花茶饮料在135℃的温度下采用UHT方法灭菌5秒,然后无菌灌装,或灌装后在85-90℃的温度下灭菌15分钟,由此即可完成整个柠檬菊花茶饮料的制备过程。

2.一种如权利要求1所述的柠檬菊花茶饮料的制备方法,其特征在于:所述的制备方法包括按顺序进行的下列步骤:
1)将菊花、绿茶分别用开水烫熟后采用冷冻干燥技术制成菊花粉和绿茶粉;
2)将柠檬去皮、去核并洗净后制成柠檬汁,然后按照上述加入量称取柠檬汁并用适量水稀释,之后用120目筛过滤后备用;
3)将按照上述加入量称取的白砂糖用适量水溶解,之后用120目筛过滤后备用;
4)将按照上述加入量称取的黄原胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
5)将按照上述加入量称取的菊花粉、绿茶粉和柠檬汁混合均匀;
6)将上述制成的菊花粉、绿茶粉和柠檬汁混合物、白砂糖水、黄原胶浆以及按照上述加入量称取的山梨酸钾加入到调配罐中,加入余量的饮用水定容并搅拌均匀,用柠檬酸、苹果酸或柠檬酸钠、碳酸氢钠将溶液PH调至4.8±0.1,由此制成柠檬菊花茶饮料;
7)将上述柠檬菊花茶饮料在135℃的温度下采用UHT方法灭菌5秒,然后无菌灌装,或灌装后在85-90℃的温度下灭菌15分钟,由此即可完成整个柠檬菊花茶饮料的制备过程。
