本发明公开了一种青少年酸奶饮料及其制备方法,由以下重量份的原材料:大蒜红曲霉发酵提取物0.5‑1.5份、石刁柏提取物0.8‑1.2份、白砂糖4‑8份、牛磺酸2‑4份、肌醇0.1‑2份、赖氨酸0.1‑2份、烟氨酸0.005‑0.2份、维生素B6 0.0001‑0.005份、维生素B12 0.0001‑0.001份、维生素C 0.05‑0.3份、三聚磷酸钠0.2‑0.5份、柠檬酸1‑4份、柠檬酸钠1‑2份、酸奶35‑40份、水至100份。本发明根据青少年生长发育的营养需求,补充充足、全面、均衡的营养物质,提高青少年的运动耐力,加速消除运动疲劳,快速恢复体能,且能预防青少年肥胖症,提高青少年免疫力。

技术领域
本发明涉及功能饮料技术领域,具体涉及一种青少年酸奶饮料及其制备方法。
背景技术
青少年在运动中和运动后,为了迅速恢复体能,通常会饮用运动饮料,来补充能量、水分、无机盐及维生素等营养物质,使机体的代谢调节过程恢复正常状态,然而目前市面上的运动饮料虽然能够帮助青少年提高运动能量,恢复体能,有效缓解疲劳,但同时也会使青少年体内血清中的胆固醇含量升高,堆积在肝内,从而导致肥胖。而且过多的饮用运动饮料,还会增加出汗量,导致水分、无机盐、维生素等也随水分一起丢失,降低中枢神经系统机能,从而形成恶性循环,既影响了青少年的运动能力,又妨碍了体力恢复。青少年正处于生长发育的黄金时期,需要补充较多的营养物质,如何为青少年补充营养物质的同时,又能保证正常生长发育所需,缓解青少年的疲劳,恢复体能,避免肥胖,是目前亟需解决的问题。
发明内容
为了解决上述问题,本发明提供了一种青少年酸奶饮料及其制备方法,针对青少年生长发育的营养需求,补充营养物质,提高青少年的运动耐力,加速消除运动疲劳,快速恢复体能,且能预防青少年肥胖,提高青少年免疫力。
本发明通过以下技术方案来实现:
一种青少年酸奶饮料,由以下重量份的原材料:大蒜红曲霉发酵提取物0.5-1.5份、石刁柏提取物0.8-1.2份、白砂糖4-8份、牛磺酸2-4份、肌醇0.1-2份、赖氨酸0.1-2份、烟氨酸0.005-0.2份、维生素B60.0001-0.005份、维生素B120.0001-0.001份、维生素C 0.05-0.3份、三聚磷酸钠0.2-0.5份、柠檬酸1-4份、柠檬酸钠1-2份、酸奶35-40份、水至100份。
优选地,一种青少年酸奶饮料,由以下重量份的原材料组成:大蒜红曲霉发酵提取物0.8-1.2份、石刁柏提取物0.9-1.1份、白砂糖5-7份、牛磺酸2.5-3.5份、肌醇0.6-1.5份、赖氨酸0.6-1.5份、烟氨酸0.008-0.15份、维生素B60.0008-0.004份、维生素B120.0005-0.008份、维生素C 0.1-0.2份、三聚磷酸钠0.3-0.4份、柠檬酸2-3份、柠檬酸钠1.2-1.8份、酸奶32-38份、水至100份。
优选地,一种青少年酸奶饮料,由以下重量份的原材料组成:大蒜红曲霉发酵提取物1份、石刁柏提取物1份、白砂糖6份、牛磺酸3份、肌醇1.05份、赖氨酸1.05份、烟氨酸0.103份、维生素B60.00255份、维生素B120.00055份、维生素C 0.175份、三聚磷酸钠0.35份、柠檬酸2.5份、柠檬酸钠1.5份、酸奶37.5份、水至100份。
优选地,所述大蒜红曲霉发酵提取物的制备方法为:
a.将大蒜去皮洗净,于85℃进行热灭酶处理,并进行破碎;
b.将破碎后的大蒜配制成培养基原料液,培养基原料液由大蒜10~30%、米粉1~5%、葡萄糖1~8%、蛋白胨0.3~1%、酵母提取物0.3~1%、甘油0~10%和氯化钙0.05~0.2%组成,将所得培养基原料液混匀装瓶,于115~121℃高压灭菌15~30min;
c.灭菌后,将培养基接种红曲霉菌种,并在20~40℃,有氧的条件下发酵2~14天;
d.发酵完成后,匀浆破碎红曲霉菌丝体,得发酵匀浆液,经冷冻干燥后,粉碎,过500目筛,得大蒜红曲霉发酵提取物。
优选地,所述石刁柏提取物的制备方法为:取石刁柏药材,加水煎煮2次,每次1.5h,每次加水量为药材量的8倍,过滤,合并过滤液,浓缩至稠膏;取1/3量加2倍量乙醇进行沉淀,过滤,取上清液浓缩至稠膏,减压干燥,粉碎,过300目筛,得石刁柏提取物。
本发明还提供一种青少年酸奶饮料的制备方法,包括以下步骤:
(1)取白砂糖于热锅中,加入50ml水搅拌加热至完全溶解,得糖浆;
(2)将大蒜红曲霉发酵提取物、石刁柏提取物、牛磺酸、肌醇、赖氨酸、烟氨酸、维生素B6、维生素B12、维生素C和酸奶混合,搅拌均匀,得混合物;
(3)将步骤(1)所得的糖浆和三聚磷酸钠、柠檬酸、柠檬酸钠加入到步骤(2)所得的混合物中混匀,水至100份,得饮料原液;
(4)将步骤(3)的饮料原液分别进行一级均质和二级均质,一级均质的压力为3-20MPa,温度为50-70℃;二级均质的压力为15-20MPa,温度为50-70℃,得均质饮料;
(5)将均质饮料在80-90℃下灭菌30s,趁热灌装,即得本发明制备的酸奶饮料。
本发明所述各主要功效成分作用机理如下:
大蒜不仅含有大量的蛋白质、脂肪、碳水化合物、维生素、多种微量元素等,还含有多种生物活性成分,如挥发性含硫化合物、水溶性有机硫化物、类固醇皂苷、皂苷配基、类黄酮类、酚类、以及有机硒、有机锗、血凝素、果聚糖、前列腺素以及各种氨基酸等。
红曲霉能产生许多聚酮类次级代谢产物,主要包括红曲色素、Monacolins类化合物、桔霉素及其他聚酮类化合物,其中最主要的生物活性代谢产物是Monacolin K,长期摄入含有Monacolin K的食物能显著降低血脂浓度,除此之外,红曲霉来源的Dimerumic acid是一种潜在的抗氧化剂,具清除DPPH、超氧阴离子自由基和羟基自由基等活性。
大蒜与红曲霉有许多相似的生理功能,多是基于其抗氧化活性,因为红曲霉的生长代谢受培养基组成的影响,因此,添加抗氧化成分原料进入培养基能够提高红曲霉发酵产品的抗氧化活性。
石刁柏富含多种维生素和各种氨基酸,其提取物中含有的皂苷、多糖、黄酮类化合物等有效成分,在为青少年提供营养成分的同时,还可以抑制血清总胆固醇、甘油三酯,提高抗氧化活性,快速消除运动疲劳。
与现有技术相比,本发明的有益之处为:
1、本发明采用红曲霉素发酵大蒜,得到大蒜红曲霉发酵提取物,将其添加至饮料中,制得饮料具有较强的抗氧化性,能够有效清除体内自由基,帮助青少年缓解疲劳;
2、本发明从石刁柏中提取其有效成分,将其加入到饮料中,对青少年血清中总胆固醇、甘油三酯具有明显的抑制作用;
3、本发明将大蒜红曲霉发酵提取物、石刁柏提取物复配制成酸奶饮料,不仅可以为青少年提供所需的营养物质,提高青少年体内SOD的活性,增强抗疲劳能力,提高运动耐力及机体免疫力,还可以预防青少年肥胖症。
具体实施方式
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
一种青少年酸奶饮料,由以下重量份的原材料:大蒜红曲霉发酵提取物0.5份、石刁柏提取物1.2份、白砂糖4份、牛磺酸4份、肌醇0.1份、赖氨酸2份、烟氨酸0.005份、维生素B60.005份、维生素B120.0001份、维生素C 0.3份、三聚磷酸钠0.2份、柠檬酸4份、柠檬酸钠1份、酸奶40份、水至100份。
所述大蒜红曲霉发酵提取物的制备方法为:a.将大蒜去皮洗净,于85℃进行热灭酶处理,并进行破碎;b.将破碎后的大蒜配制成培养基原料液,培养基原料液由大蒜10~30%、米粉1~5%、葡萄糖1~8%、蛋白胨0.3~1%、酵母提取物0.3~1%、甘油0~10%和氯化钙0.05~0.2%组成,将所得培养基原料液混匀装瓶,于115~121℃高压灭菌15~30min;c.灭菌后,将培养基接种红曲霉菌种,并在20~40℃,有氧的条件下发酵2~14天;d.发酵完成后,匀浆破碎红曲霉菌丝体,得发酵匀浆液,经冷冻干燥后,粉碎,过500目筛,得大蒜红曲霉发酵提取物。
所述石刁柏提取物的制备方法为:取石刁柏药材,加水煎煮2次,每次1.5h,每次加水量为药材量的8倍,过滤,合并过滤液,浓缩至稠膏;取1/3量加2倍量乙醇进行沉淀,过滤,取上清液浓缩至稠膏,减压干燥,粉碎,过300目筛,得石刁柏提取物。
上述一种青少年酸奶饮料的制备方法,包括以下步骤:
(1)取白砂糖于热锅中,加入50ml水搅拌加热至完全溶解,得糖浆;
(2)将大蒜红曲霉发酵提取物、石刁柏提取物、牛磺酸、肌醇、赖氨酸、烟氨酸、维生素B6、维生素B12、维生素C和酸奶混合,搅拌均匀,得混合物;
(3)将步骤(1)所得的糖浆和三聚磷酸钠、柠檬酸、柠檬酸钠加入到步骤(2)所得的混合物中混匀,水至100份,得饮料原液;
(4)将步骤(3)的饮料原液分别进行一级均质和二级均质,一级均质的压力为3-20MPa,温度为50-70℃;二级均质的压力为15-20MPa,温度为50-70℃,得均质饮料;
(5)将均质饮料在80-90℃下灭菌30s,趁热灌装,即得本发明制备的酸奶饮料。
实施例2
一种青少年酸奶饮料,由以下重量份的原材料:大蒜红曲霉发酵提取物1.5份、石刁柏提取物0.8份、白砂糖8份、牛磺酸2份、肌醇2份、赖氨酸0.1份、烟氨酸0.2份、维生素B60.0001份、维生素B120.001份、维生素C 0.05份、三聚磷酸钠0.5份、柠檬酸1份、柠檬酸钠2份、酸奶35份、水至100份。
实施例3
一种青少年酸奶饮料,由以下重量份的原材料组成:大蒜红曲霉发酵提取物0.8份、石刁柏提取物1.1份、白砂糖5份、牛磺酸3.5份、肌醇0.6份、赖氨酸1.5份、烟氨酸0.008份、维生素B60.004份、维生素B120.0005份、维生素C 0.2份、三聚磷酸钠0.3份、柠檬酸3份、柠檬酸钠1.2份、酸奶38份、水至100份。
实施例4
一种青少年酸奶饮料,由以下重量份的原材料组成:大蒜红曲霉发酵提取物1.2份、石刁柏提取物0.9份、白砂糖7份、牛磺酸2.5份、肌醇1.5份、赖氨酸0.6份、烟氨酸0.15份、维生素B60.0008份、维生素B120.008份、维生素C 0.1份、三聚磷酸钠0.4份、柠檬酸2份、柠檬酸钠1.8份、酸奶32份、水至100份。
实施例5
一种青少年酸奶饮料,由以下重量份的原材料组成:大蒜红曲霉发酵提取物1份、石刁柏提取物1份、白砂糖6份、牛磺酸3份、肌醇1.05份、赖氨酸1.05份、烟氨酸0.103份、维生素B60.00255份、维生素B120.00055份、维生素C 0.175份、三聚磷酸钠0.35份、柠檬酸2.5份、柠檬酸钠1.5份、酸奶37.5份、水至100份。
对比例1
与实施例1的区别在于,原料配方中没有添加大蒜红曲霉发酵提取物,具体为:石刁柏提取物1.2份、白砂糖4份、牛磺酸4份、肌醇0.1份、赖氨酸2份、烟氨酸0.005份、维生素B60.005份、维生素B120.0001份、维生素C 0.3份、三聚磷酸钠0.2份、柠檬酸4份、柠檬酸钠1份、酸奶40份、水至100份。
对比例2
与实施例1的区别在于,原料配方中没有添加石刁柏提取物,具体为:大蒜红曲霉发酵提取物0.5份、白砂糖4份、牛磺酸4份、肌醇0.1份、赖氨酸2份、烟氨酸0.005份、维生素B60.005份、维生素B120.0001份、维生素C 0.3份、三聚磷酸钠0.2份、柠檬酸4份、柠檬酸钠1份、酸奶40份、水至100份。
功效验证
试验例1
取本发明实施例1-5和对比例1-2制备的饮料进行营养成分含量的测定,实验结果如下表1所示:

如上表所示,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加大蒜红曲霉发酵提取物,可将饮料中的蛋白质、矿物质和维生素的含量分别提高75%、43.6%和86.0%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加石刁柏提取物,可将饮料中蛋白质、矿物质、维生素的含量分别提高43.6%、17.5%、45.3%。
综上可知,在本发明制备的饮料中加入大蒜红曲霉发酵提取物、石刁柏提取物复配制作饮料,可显著提高饮料中蛋白质、矿物质和维生素等营养物质的含量,配合青少年生长发育规律,帮助促进青少年健康成长。
试验例2
选择80只雄性小鼠进行实验,体重18-24g,随机分成7组,每组10只,在2个月内,分别灌喂本发明实施例1-5和对比例1、2制备的运动饮料50ml/d。两个月后,采取各组小鼠血液样本,分离出血清,测定各组小鼠血清中谷胱甘肽过氧化物酶活性、超氧化物歧化酶活性以及总胆固醇、甘油三酯的含量。测定结果如下表2所示:

如上表所示,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加大蒜红曲霉发酵提取物,能将小鼠血清中谷胱甘肽过氧化物酶和超氧化物歧化酶活性分别提高60.6%和12.3%,并且可将小鼠血清中总胆固醇、甘油三酯含量分别降低22.3%和33.0%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加石刁柏提取物,能将小鼠血清中谷胱甘肽过氧化物酶和超氧化物歧化酶活性分别提高65.4%和12.9%,并且可将小鼠血清中总胆固醇、甘油三酯含量分别降低21.0%、26.2%。
综上可知,在本发明制备的饮料中加入大蒜红曲霉发酵提取物复配制作饮料,所制得的饮料能够显著提高小鼠血清中谷胱甘肽过氧化酶和超氧化物歧化酶的活性,加快自由基清除效率,减少机体疲劳感的发生;且能够显著降低小鼠血清中胆固醇和甘油三酯水平,具有保护机体细胞免受自由基引起的氧化损害的作用,能够有效防止脂质过氧化,帮助机体快速恢复体力。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。

1.一种青少年酸奶饮料,其特征在于,由以下重量份的原材料:大蒜红曲霉发酵提取物0.5-1.5份、石刁柏提取物0.8-1.2份、白砂糖4-8份、牛磺酸2-4份、肌醇0.1-2份、赖氨酸0.1-2份、烟氨酸0.005-0.2份、维生素B6 0.0001-0.005份、维生素B12 0.0001-0.001份、维生素C 0.05-0.3份、三聚磷酸钠0.2-0.5份、柠檬酸1-4份、柠檬酸钠1-2份、酸奶35-40份、水至100份。

6.一种制备如权利要求1~5任一项所述青少年酸奶饮料的方法,其特征在于,包括以下步骤:
(1)取白砂糖于热锅中,加入50ml水搅拌加热至完全溶解,得糖浆;
(2)将大蒜红曲霉发酵提取物、石刁柏提取物、牛磺酸、肌醇、赖氨酸、烟氨酸、维生素B6、维生素B12、维生素C和酸奶混合,搅拌均匀,得混合物;
(3)将步骤(1)所得的糖浆和三聚磷酸钠、柠檬酸、柠檬酸钠加入到步骤(2)所得的混合物中混匀,水至100份,得饮料原液;
(4)将步骤(3)的饮料原液分别进行一级均质和二级均质,一级均质的压力为3-20MPa,温度为50-70℃;二级均质的压力为15-20MPa,温度为50-70℃,得均质饮料;
(5)将均质饮料在80-90℃下灭菌30s,趁热灌装,即得本发明制备的酸奶饮料。
