Abstract

MÉTODO PARA OBTER AÇÚCAR BRANCO DO CALDO DE CANA. A presente invenção refere-se a um método para a obtenção de açúcar branco a partir do caldo de cana, caracterizado pela obtenção de cores de açúcar composto de 300 a 150 unidades ICUMSA, com uma quantidade de sulfitos não superior a 5 ppm, e cinzas não superiores a 0,20% no caso de açúcar branco e em caso de açúcar refinado com cores inferiores a 40 UI, sulfitos inferiores a 5 ppm e cinzas inferiores a 0,04%, com menor quantidade de produtos químicos, equipamentos e formação de açúcares redutores; otimizar o tempo de fabricação, diminuir a deterioração, tornar eficiente o processo e produtos químicos e evitar a contaminação com S02. O método caracteriza-se pela simplificação do processo tradicional de obtenção de açúcar branco com o uso de enxofre elementar, eliminando a prealcalinização e sulfitação com seu respectivo maquinário e equipamento, reduzindo a quantidade de produtos químicos como a cal, ácido fosfórico, enxofre e carvão ativado para agregar somente metabissulfito de sódio, complementado ou não com fosfato, monosódico em caldos com valores de 4 a 6,6 de pH, antes de entrar em qualquer processo de clarificação do caldo, melado ou licor fundido.
