Abstract

EMULSÕES NUTRICIONAIS GELADAS. São descritas emulsões nutricionais compreendendo gordura, proteína e carboidrato. As emulsões incluem um complexo-V ou fase aquosa compreendendo um tensoativo de grau alimentício complexado com uma polidextrose tendo um grau médio de polimerização de pelo menos cerca de 10; em que a emulsão nutricional tem uma primeira viscosidade a 20ºC menor que cerca de 0,3 Pa.s (300 cps) e uma segunda viscosidade a uma temperatura de 0ºC a 8ºC que é pelo menos cerca de 0,05 Pa.s (50 cps) mais elevada do que a referida primeira viscosidade. Também é descrito um processo para a preparação da emulsão nutricional. As emulsões nutricionais desenvolvem uma textura surpreendentemente grossa, cremosa, quando geladas antes do uso.
