Abstract
EMULSÕES NUTRICIONAIS GELADAS. São descritas emulsões nutricionais compreendendo gordura, proteína e carboidrato. As emulsões incluem um complexo-V ou fase aquosa compreendendo um tensoativo de grau alimentício complexado com uma polidextrose tendo um grau médio de polimerização de pelo menos cerca de 10; em que a emulsão nutricional tem uma primeira viscosidade a 20ºC menor que cerca de 0,3 Pa.s (300 cps) e uma segunda viscosidade a uma temperatura de 0ºC a 8ºC que é pelo menos cerca de 0,05 Pa.s (50 cps) mais elevada do que a referida primeira viscosidade. Também é descrito um processo para a preparação da emulsão nutricional. As emulsões nutricionais desenvolvem uma textura surpreendentemente grossa, cremosa, quando geladas antes do uso.COLD NUTRITIONAL EMULSIONS. Nutritional emulsions comprising fat, protein and carbohydrate are described. Emulsions include a V-complex or aqueous phase comprising a food-grade surfactant complexed with a polydextrose having an average degree of polymerization of at least about 10; wherein the nutritional emulsion has a first viscosity at 20°C of less than about 0.3 Pa.s (300 cps) and a second viscosity at a temperature of 0°C to 8°C which is at least about 0.05 Pa.s (50 cps) higher than said first viscosity. A process for preparing the nutritional emulsion is also described. Nutritional emulsions develop a surprisingly thick, creamy texture when chilled before use.
