Abstract
PRODUTO ALIMENTìCIO, BARRA ALIMENTìCIA, MISTURA DE PROTEìNA, E, MéTODO PARA FABRICAR UMA BARRA ALIMENTìCIA. Um sistema de proteína para produtos alimentícios contendo uma fonte de umidade é fornecido que compreende uma combinação de proteínas completas, caseína e proteína láctea parcialmente hidrolisada e proteína de legume parcialmente hidrolisada em uma quantidade total eficaz para reduzir o tempo de mistura e/ou as exigências de cisalhamento e reduzir o desenvolvimento de firmeza durante o processamento e armazenagem dos produtos alimentícios para aumentar a vida de prateleira. A firmeza reduzida é obtida sem amargar o produto alimentício usando-se uma mistura de proteína que libera um equilíbrio único de proteínas parcialmente hidrolisadas e completas e caseína. Os métodos de fabricar os produtos alimentícios com as misturas de proteína também são abrangidos.
