Abstract
Productos alimenticios que contiene una fuente de humedad que comprende una combinacion de proteínas intactas, caseína, y proteína láctea hidrolizada parcialmente y proteína vegetal hidrolizada parcialmente en una cantidad total efectiva para reducir el tiempo de mezcla y/o requerimientos de cizallamiento, y reducir el desarrollo de la dureza durante la elaboracion y el almacenamiento de los productos alimenticios para aumentar la vida de almacenamiento. Se logra una reduccion de la dureza sin que el producto alimenticio se vuelva amargo mediante el uso de una combinacion de proteínas que proporciona un equilibrio unico de proteínas intactas y parcialmente hidrolizadas y caseína. También abarca los métodos de elaboracion de productos alimenticios con las combinaciones de proteínas.
