EXTRUDADO DE PROTEìNA INGREDIENTE ALIMENTìCIO FUNICONAL E PRODUTOS ALIMENTìCIOS PROTEINáCEOS. A presente invenção refere-se a materiais alimentícios que contêm uma alta concentração de proteína vegetal e aos processos de fabricação dos mesmos. Mais especificamente, a presente invenção refere-se a extrudados de proteína vegetal que contêm altas concentrações de proteína e baixas concentrações de carboidratos, aos processos de fabricação de tais extrudados de proteínas e ao uso de tais extrudados de proteínas como ingredientes alimentícios funcionais.
