Uma composição de retenção de água para reter o excesso de líquido após o cozimento de alimentos amiláceos de elevado teor de carboidrato, tais como arroz, batatas, massas, cereais, legumes etc., compreendendo (a) de 20 A 60% em peso de um amido fisicamente modificado, (b) de 35 a 65% em peso de um amido quimicamente modificado, e (c) de 2 a 15% em peso de uma emulsão graxa comestível seca.
