Abstract

"MéTODO E DISPOSITIVO PARA COAGULAR A SUPERFìCIE EXTERNA DE UM FILAMENTO DE SALSICHA DESCARREGADO DE UMA MáQUINA DE EXTRUSãO DE SALSICHA". O filamento de salsicha (26) é extrusado sobre uma correia (48) e transportado através de um sistema de ducha de salmoura por aproximadamente 40 segundos. A salmoura é pulverizada através de bicos (82) sobre a salsicha enquanto percorrendo sobre a correia (48). A salsicha é virada várias vezes durante a ducha para garantir distribuição uniforme de salmoura. A velocidade do transportador é controlada para igualar a velocidade do extrusor (24), dessa forma evitando o estiramento do produto a medida que ele está sendo extrusado. O transportador (34) proporciona controle de movimento exato da corda de salsicha e o tempo de permanência na ducha de salmoura pode ser exatamente regulado. Desde que o sistema transportador é aberto ele proporciona a si próprio fácil limpeza e inspeção visual. O transportador (34) consiste de uma armação (36) que sustenta o sistema transportador, o sistema de ducha de salmoura, as lâminas de ar e o aquecedor infravermelho (50). O sistema de ducha de salmoura é composto de um compartimento de gotejamento, um tanque de salmoura (84), uma bomba centrífuga e uma rede de distribuição de encanamento/salmoura. A bomba centrífuga transporta a salmoura do tanque (84) através da rede de distribuição da salmoura. A salmoura é pulverizada sobre a salsicha através de bicos (82) localizados em muitos intervalos por toda a seção do transportador (34).
