Abstract
Una emulsión estable de gas en aceite en agua. Dichas emulsiones pueden ser empleadas como productos alimenticios, por ejemplo como una mayonesa o como un aderezo para ensalada. Se logró este objetivo a través de una emulsión de gas en aceite en agua que se prepara combinando una mezcla de éster de ácido graso de sacarosa en agua, con un aceite aireado que contiene éster de ácido graso de sacarosa. El aceite aireado es dispersado en la fase acuosa, en un producto que contiene pequeñas gotas de aceite que contienen a su vez burbujas de gas en una fase acuosa continua. Se desarrolló una emulsión de gas en aceite en agua que es estable ante la exudación de aceite, la separación en fases y la inversión de fases durante al menos dos meses.
