Abstract
Se refiere a una composicion estructurada vegetal que comprende: i) de 1% a 15% en peso de un emulsionante, con relacion al peso total de la composicion, el cual comprende una mezcla de monoacilgliceroles y diacilgliceroles derivados de aceites vegetales totalmente hidrogenados, donde el 52% a 99% en peso comprende monoacilglicerol con relacion al peso total y ii) al menos un aceite vegetal refinado, pudiendo o no incluir sus derivados; dicha composicion contiene un limite maximo de 2% de acidos grasos trans y un contenido de acidos grasos saturados inferior o igual a 39% en peso con relacion al peso total de la composicion; siendo util en la confeccion de productos alimenticios y cosmeticos
