Abstract
Un método para fabricar una confitura congelada que comprende proporcionar una confitura congelada que se va a revestir, proporcionar una composición de revestimiento líquida que comprende menos de 25% de ácidos grasos saturados y que se solidifica en una cristalización de dos etapas a una temperatura de -15ºC, al menos revestir parcialmente la confitura congelada, dejar que la composición de revestimiento lleve a cabo un primer evento de cristalización y dejar que la confitura congelada al menos parcialmente revestida lleve a cabo un segundo evento de cristalización.
