Abstract
Se provee un método de concentración de proteína en polvo de grano, en donde el polvo de grano incluye proteína que ha sido concentrada usando el método, y un aditivo alimenticio que incluye el polvo de grano con la proteína concentrada. De acuerdo con el método de concentración de proteína en polvo de grano, el polvo de grano es tratado con enzima para incrementar el contenido de sacárido soluble en agua en una fuente y, mediante inoculación de bacteria o levadura y fermentación, el sacárido soluble en agua incrementado es extraído, lo que genera una mayor concentración de proteína. Por ende, los efectos en el incremento de la proporción del contenido de proteína y la función del polvo de grano como fuente de proteína son potenciados.
