Abstract
Una bacteria de la especie Lactobacillus fermentum con la capacidad de inhibir el desarrollo del hongo Penicillium solitum depositado con el número de identificación DSM32093, o el desarrollo del hongo Penicillium brevicompactum depositado con el número de identificación DSM32094, en al menos 50%. La actividad inhibitoria puede ser determinada en un ensayo que comprende: (1) la preparación de un producto lácteo fermentado por: (a) inoculación de leche con Lactobacillus fermentum en una concentración de al menos 10⁷ UFC/g y con un cultivo iniciador, (b) fermentación hasta lograr un pH de 4,6, y (c) solidificación de la leche fermentada con el agregado de agar; (2) la generación de al menos un punto de P. solitum o de P. brevicompactum en la leche fermentada solidificada con agar con una concentración de 500 esporas por mancha, y su incubación durante 7 días a una temperatura de 25ºC; (3) la determinación del porcentaje de inhibición mediante la determinación del diámetro más grande de la colonia formada por el desarrollo de P. solitum o de P. brevicompactum y la expresión del diámetro como el porcentaje del diámetro más grande formado bajo las mismas condiciones pero en ausencia de la cepa de Lactobacillus fermentum. Composiciones que comprenden la bacteria, métodos para la elaboración de productos lácteos fermentados utilizando la bacteria, y los productos obtenidos de esta manera.
