Abstract
La presente proporciona un método para controlar el crecimiento de microorganismos no deseados, limitando su acceso al manganeso. Más específicamente, la presente proporciona un método para inhibir o retrasar el crecimiento de la levadura y del moho, reduciendo la concentración de manganeso en un producto que, con preferencia, es un producto alimenticio. La presente también provee eliminadores de manganeso y usos de los mismos para inhibir o retrasar el crecimiento de los hongos.
