Abstract
Productos y procesos que proporcionan una reduccion de concentracion de carbamato de etilo en una bebida fermentada o producto alimenticio, usando una cepa de levadura que ha sido transformada para expresar un transportador de urea, para transportar activamente urea dentro de la celula de levadura, como DUR3, bajo condiciones de fermentacion. La levadura tambien puede ser modificada para expresar una actividad enzim tica degradante de urea intracelular, bajo condiciones de fermentacion, como DUR1,2. Adem s de poseer una cepa de levadura transformada para reducir represion catabolica de nitrogeno de la expresion del gen de una prote¡na transportadora de urea, bajo condiciones de fermentacion, un metodo para modificar una cepa de levadura, metodo para hacer una bebida fermentada o producto alimenticio. Uso de la cepa en la preparacion de una bebida fermentada y una bebida fermentada o producto alimenticio.
