Abstract

La presente se refiere a nuevas cepas de Saccharomyces que pueden ser producidas en un sustrato carbonado que permite reemplazar total o parcialmente la utilizacion de azucar, y su utilizacion para la produccion de levaduras, especialmente a escala industrial. Otro objeto de la presente se refiere a un procedimiento de produccion de levaduras del género Saccharomyces en un sustrato carbonado que permite reemplazar total o parcialmente la utilizacion de azucar. Reivindicacion 1: Cepa de Saccharomyces, caracterizada porque en presencia de un medio de cultivo que comprende una mezcla de glicerol y de azucar, en condicion aerobia, consume al menos un 80% del glicerol de dicha mezcla, comprendiendo dicha mezcla una proporcion de glicerol de, al menos, un 20% en equivalente sacarosa, siendo la suma de las proporciones de glicerol y de azucar de dicha mezcla igual al 100% en equivalente sacarosa.
