Abstract
Un proceso para producir un producto de repostería que comprende chocolate resistente al calor o una masa de compuesto resistente al calor, y con el producto de repostería, que es producido mediante este proceso. El proceso utiliza el rociado de agua y/o de una solucion de poliol (tal como un alcohol de azucar o un azucar) sobre chocolate o una masa de compuesto, induciendo de esa manera la formacion de chocolate resistente al calor o una masa de compuesto resistente al calor.
