Abstract
Proteasa de tipo mejorado que comprende una secuencia de aminoácidos que es al menos 75% idéntica a SEQ ID Ns: 3, en donde dicha proteasa de tipo mejorado tiene al menos una mutacion que se selecciona del grupo que consiste en: (A) sustitucion de la glutamina que corresponde a la glutamina de la posicion 265 de SEQ ID Ns: 3 por un aminoácido ácido; y (B) sustitucion de la glutamina de la posicion 266 de SEQ ID Ns: 3 por un aminoácido ácido, y en donde dicha proteasa de tipo mejorado tiene actividad coagulante de leche. Además el ácido nucleico que codifica dicha proteasa, un vector de expresion que lo comprende, una célula transformada así como un método para producir la proteasa.
