Abstract

Cebada con pérdida total de las enzimas lipoxigenasa (LOX)-1 y LOX-2 funcionales, y productos de la planta producidos a partir de la misma, tales como malta elaborada usando semillas de cebada que son defectuosas en la síntesis de las enzimas LOX-1 y LOX-2 dioxigenantes de ácidos grasos. Dichas enzimas son responsables de las principales actividades relacionadas con la dioxigenación del ácido linoleico a los ácidos 9- y 13-hidroperoxi-octadecadienoico, respectivamente. El ácido 9-hidroperoxi-octadecadienoico representa un metabolito de la vía de LOX, la cual -a través de otras reacciones enzimáticas o espontáneas - puede llevar a la aparición de trans-2-nonenal (T2N), permite que los cerveceros produzcan una cerveza con niveles insignificantes de sabores desagradables específicos de T2N, a viejo, aún después de un almacenamiento prolongado de la bebida.
