Abstract
Productos alimenticios emulsionables por batido o pre-emulsionados estables que comprenden gomas vegetales en combinacion con proteínas y que comprenden opcionalmente hidrocoloides celulosicos, grasas triglicéridas, agentes edulcorantes y agentes de incremento de volumen y agua. El producto líquido emulsionable por batido está libre de emulsionantes basados en grasa. El producto es estable durante el procesamiento y congelacion/ descongelacion y una vez batido el producto resultante puede ser usado como glacé, cobertura y relleno en un postre. El producto pre-emulsionado comprende además emulsionantes basados en grasa no hidrogenados pero está libre de otros emulsionantes basados en grasa. Este producto puede ser almacenado congelado y una vez descongelado puede ser aplicado directamente como glacé, cobertura o relleno.
