Abstract

Una solucion de nanoproteínas que tiene una turbidez medida por nefelometría a una concentracion de nanoproteína de 200 g/l y a un pH en el rango entre pH 4 y pH 8 menor que 70 NTU. Esta solucion se puede usar en forma ventajosa en la estabilizacion de vinos contra precipitacion de sales de tartrato porque es muy límpida y se puede agregar directamente al vino sin causar turbidez. Además se presenta un método para producir dichas soluciones.
