Abstract

Un aspecto de la invencion se refiere a un método para producir una composicion liquida acuosa comestible que ha sido complementada con al menos 2 mmol de calcio por litro, dicho método comprende las etapas sucesivas de: a) proporcionar un liquidoacuoso acido que tiene un pH que oscila entre 1,0 y 5,0 y que contiene acido disuelto que es capaz de formar una sal insoluble en agua con calcio; b) agregar al liquido acuoso acido una sal de carbonato de calcio insoluble en agua solida; c) dejardescarboxilar el carbonato de calcio hasta que todo el calcio se haya disuelto; y d) estabilizar la solucion metaestable contra la sedimentacion de la sal de calcio agregando proteína de soja a dicha solucion metaestable y, si el pH de dichasolucion metaestable es inferior a 3,2, se aumenta el pH de dicha solucion a un pH superior a 3,2. Otro aspecto de la invencion se refiere a una bebida de soja que se puede obtener a través del método de la presente y que se caracteriza porque noformará un sedimento de sal de calcio cuando se almacena a 20s C bajo condiciones de inactividad durante al menos 3 meses. La invencion también brinda un polvo reconstituible que se puede reconstituir para obtener dicha bebida de soja
