Abstract
Un proceso para producir un almidon que comprende tratar un almidon alimenticio que comprende amilopectina, con glucanotransferasa para producir un almidon de cadena extendida, y tratar el almidon de cadena extendida con una enzima desramificadora para producir un producto de almidon que comprende fragmentos de amilosa. Por lo menos aproximadamente 38% en peso de los fragmentos de amilosa tiene un grado de polimerizacion (DP) de por lo menos aproximadamente 35. Reivindicacion 38: Un producto alimenticio que comprende un almidon, caracterizado porque el almidon se produce mediante un proceso que comprende: tratar un almidon alimenticio que comprende amilopectina con glucanotransferasa para producir un almidon de cadena extendida; y tratar el almidon de cadena extendida con una enzima desramificadora para producir un producto de almidon que comprende fragmentos de amilosa; en donde por lo menos aproximadamente 38% en peso de los fragmentos de amilosa tiene un grado de polimerizacion (DP) de por lo menos aproximadamente 35.
