Abstract

Productos alimenticios continuos grasos que comprenden una fase acuosa dispersada, un emulsionante primario polirricinoleato de poliglicerol, uno o más co-emulsionantes, en donde la fase acuosa dispersada comprende un almidon gelatinizado y en donde el contenido de grasa solida de la grasa es menor del 6% a 35 degree C o a la temperatura ambiente de interés son estables al almacenamiento a 40 degree C, estable al esparcir y muestran un buen comportamiento de fusion durante el consumo.
