Abstract

Se revela una pasta sin contenido de almidón que comprende: - 2 a 10% de oligosacáridos;- 3 a 12% de proteína soluble; - 10 a 60% de aceite vegetal;- 0 a 5% de emulsionante;- agua hasta 100%.El uso de esta pasta presenta una ventaja particular: que ya no es necesario freir el producto antes de proceder a congelarlo, aunque se logra un productoque tiene el sabor de aquellos que están fritos previamente.
