Abstract

Método para obtener grasa y/o aceite con distribución modificada de ácidos grasos en los glicéridos por transesterificación de catalización heterogénea que consiste en hacer reaccionar la grasa y/o el aceite de origen biológico a transesterificar en presencia de un catalizador que contiene una sal metálica de un aminoácido o un derivado de aminoácido básico. Usando este catalizador es posible evitar los inconvenientes de los métodos de transesterificación convencionales.
