Abstract

Se trata de un proceso para producir un sabor a carne, a partir de una mezcla de vegetal de proteínas y de una fuente vegetal de carbohid ratos, queinicialmente tiene 45% p/p de materia seca, que se inocula con especies microbianas dea plicacion en preparaciones de productos de carne co cidos, y seincuba para producir sabor a carne, extraible con aceite, un gas su percrítico o en estado líquido, o solventes de fluorcarbonos. Se preparan tambiéncomposiciones que incluyendicho sabor y una utilizacion como sabor izantes.
