Abstract
El método para estrechar una masa alargada de un producto de emulsión cárnica coextruido que tiene una superficie exterior expuesta a la atmósferasin el beneficio de una envoltura cerrada comprende someter la masa alargada a una fuerza constrictiva aplicada a intervalos espaciados a lo largo de la mismapara producir una pluralidad de puntos de estricción de diámetro reducido a lo largo de la masa alargada. Los puntos de estricción están rodeados por unmaterial de estricción comestible capaz de mantener los puntos de estricción en una condición de diámetro reducido durante un ciclo de cocción efectuado a unatemperatura que excede de 60°C. Luego de la cocción, la masa alargada es sometida entonces a un enjuague con una soluciónhecha con agua y de unatemperatura de menos de 60°C, con lo que el material de estricción es disuelto y eliminado de la masa alargada. El material de estricción preferido es elegidodel grupo que consiste en hidroxipropilcelulosa y metilhidroxipropilcelulosa.
