Abstract

Det er beskrevet en fremgangsmåte til fremstilling av komprimerte dehydrerte næringsmidler, hvor nevnte fremgangsmåte er karakterisert ved at den omfatter følgende trinn: a) tilmåling av det frysetørkede og/eller tørkede produkt av vegetabilsk og/eller animalsk opprinnelse, i doser nødvendig for å oppnå det ønskede sluttprodukt; b) fukting av utgangsproduktene ved hjelp av en vann/alkohol-oppløsning eller ved hjelp av bare alkohol, og/eller ved å holde produktene på en temperatur mellom 20°C og 95°C i l s til 10 min, til den ønskede mykhet er oppnådd og mulig; bl) for noen produkter, tilsetting av en næringsmiddeltype tykningsforbindelse opplest i en vann/alkohol-oppløsning eller bare i alkohol, hvor den tilsatte mengde er slik at vekten av oppløsningen tilsvarer 1-6 % av sluttproduktet; c) komprimering av produkt(et)(ene) med et trykk mellom 2 og 100 kg/cm2, og en temperazur mellom 20°C og 95°C, i mellom l s og 10 s; og d) pakking av det således oppnådde produkt med et materiale med høygradig sperre; hvor det endelige produkt er krevet å ha en vannaktivitetsverdi (VA) mindre eller lik 0,4-0,5; såvel scm produktene oppnådd cirek^e ved hjelp av nevnte fremgangs- måte .
