Abstract

La presente invencion describe un recubrimiento duro libre de azucar preparado a partir de un jarabe de maltitol liquido que comprende fraccion de DP4+; en el procedimiento de goma de mascar, el maltitol liquido puede aplicarse a un alto contenido de sustancia seca, es decir, mayor de 65%; el recubrimiento duro obtenido es crujiente, no pegajoso y no se parte durante el post-procesamiento.
