Abstract
La presente invención se relaciona con un auxiliar de cocción estable al almacenamiento para recubrir y freír un producto alimenticio en una etapa, por ejemplo, en una sartén caliente, el auxiliar de cocción comprende 3-28 % en peso de aceite, 20-60% en peso de agua, 1.3-5.5% en peso de almidón modificado, 0.1-10% en peso de emulsionante, 3-15 % en peso de sal, 0.5-30 % en peso de azúcar y 0.5-45 % en peso de saborizantes y en donde el auxiliar de cocción tiene una viscosidad en el rango de 3 a 65 Pa.s a una velocidad de cizallamiento de 1 s-1 a 25 °C, y el aceite y el agua están en forma de una emulsión. Aspectos adicionales de la invención son el método para preparar dicho auxiliar de cocción, así como también un método para recubrir y freír un producto alimenticio en una sartén o superficie calientes.
