Abstract
La presente invención se refiere a un proceso para producir un producto alimenticio almacenado a temperatura ambiente que comprende proporcionar un producto alimenticio con un pH de entre 3.4 y 4.4, someter el producto alimenticio a tratamiento de calor para obtener un producto alimenticio tratado con calor, agregar asépticamente al producto alimenticio tratado con calor una o más de las cepas de bacterias de ácido láctico almacenadas a temperatura ambiente para obtener un producto alimenticio almacenado a temperatura ambiente, y almacenar el producto alimenticio almacenado a temperatura ambiente a temperatura ambiente por un periodo de tiempo, en donde la cepa de bacterias de ácido láctico almacenadas a temperatura ambiente se selecciona a partir del grupo que consiste de cepas, (i) en donde la cepa es capaz de retener la viabilidad al final de 150 días a una temperatura de 25 °C, y (ii) en donde el pH a lo sumo se reduce 0.8 unidades durante el periodo de almacenamiento, y (iii) en donde la cepa se selecciona a partir del grupo que consiste de Lactobacillus paracasei, Lactobacillus rhamnosus, Lactobacillus fermentum y Lactobacillus delbrueckii subsp. bulgaricus, y mutantes y variantes de las mismas.
