Abstract

La presente invención se relaciona con una composición para producir un producto lácteo fermentado que muestra un grado bajo de acidificación posterior durante el almacenamiento, que comprende ? 1) un cultivo iniciador de bacterias acidolácticas que comprende por lo menos una cepa de Streptococcus thermophilus deficiente en lactosa, la cual es capaz de metabolizar un carbohidrato diferente de lactosa, y por lo menos una cepa de Lactobacillus delbrueckii subsp. bulgaricus deficiente en lactosa, la cual es capaz de metabolizar el carbohidrato diferente de lactosa, y ? 2) una cepa de un probiótico que se selecciona del grupo que consiste de la cepa de Lactobacillus y una cepa de Bifidobacterium.
