Abstract
La invención se refiere a un polipéptido que tiene actividad quimosina que: a. es capaz de hidrolizar alfa s1-caseína bovina en la posición F23F24 para formar as1-I CN (f24-199) más rápidamente que la quimosina de camello; y b. tiene una relación C/P mayor que la relación C/P de quimosina bovina.
