Abstract

La presente invención se refiere a mutantes de bacterias de ácido láctico que son resistentes al antibiótico ampicilina y que se encontró que dan una mayor textura incrementada cuando se cultiva en leche mientras que mantiene las otras propiedades de crecimiento de la cepa parental. La presente invención, además, se refiere a las composiciones que comprenden tales mutantes y a los productos lácteos fermentados por las bacterias de ácido láctico resistentes a ampicilina.
