Abstract
La presente invención se refiere a un proceso para licuar proteínas de cereal. Se describe, además, un proceso para fabricar proteína de cereal hidrolizada. Se describen, además, una composición que comprende proteínas de cereal hidrolizadas, proteínas se obtienen mediante el proceso de la presente invención, y sus usos en aplicaciones alimenticias y de forraje. Particularmente, se describe el uso de una composición que comprende proteínas de trigo hidrolizadas como sustituto parcial o total de una proteína animal en leche para ternero.
