Abstract
La invención se refiere a la industria de los alimentos, en particular, a la tecnología de producción del café liofilizado instantáneo, y puede ser utilizada en la industria de producción de café. La composición de café final basada en el café liofilizado que contiene el café molido fino, tostado, regular, dentro de los gránulos liofilizados, tiene un perfil organoléptico del café molido regular, recién elaborado, en donde no se tiene la necesidad de elaboración en comparación con el último. En los métodos descritos, el café molido fino, tostado, regular, de una variedad o como una mezcla de variedades, dependiendo del perfil organoléptico requerido en el producto final, es incorporado en el extracto de café líquido, concentrado, antes de la liofilización. La composición de café y el método, de acuerdo con la invención, permiten expandir la clasificación de café liofilizado por incorporación de aditivos alimenticios no solubles en agua dentro de un ciclo de procesamiento.
