Abstract
Galletas o tentempiés de queso teniendo una figura de pasta se producen mediante mezclar por lo menos una harina, queso, y agua para obtener una masa teniendo un contenido de queso real de alrededor de 5% por peso a alrededor de 60% por peso, con base en el peso de la masa, extrudir la masa a una presión y temperatura la cual evita gelatinización sustancial de almidón y expansión de la masa. La masa es extrudida a través de un troquel para obtener una cuerda de masa configurada, la cual puede cortarse en el troquel en piezas de masa configuradas. Las piezas de masa configuradas pueden hornearse ó freírse para obtener galletas ó tentempiés de queso configurados en la forma de una figura de pasta, tal como una figura hueca, de rejilla, de hélice o espiral. Adicionalmente, las galletas o tentempiés exhiben una textura tostada o crujiente, no vidriosa, y una estructura celular fermentada, no inflada.
