Ming Tree, Friend Green Tomato Sandwich, Bev & Her Boys, And Skunks

Ming Tree

Our Kia was due for it's annual service so we drove both cars to town, dropped off the Kia at the dealership, and went to lunch at the Ming Tree Chinese Restaurant in Alcoa.

Fresh Tomato Focaccia Pizza & Pups New Cut

These next two pics are from the web but they look just like Teddy Bear & Bodie's normal look.

Home Grown (Restaurant), Bodie, And Snow

When Madison (granddaughter) lived with us the first time, she was in 8th grade and, even though we had two dogs, we decided to get her a dog of her own.  After some looking around we ended up with a cute little Maltese puppy that Madison named Bodie and we all grew to love him so we were disappointed when she moved back home and opted to take Bodie with her – but of course we understood.

When Madison went off to college, Bodie ended up with Rhett and Beth, which is the current situation but since they both retired in October, they have been traveling extensively and Bodie ends up being boarded a lot.  Since they plan on more traveling, we all thought it would be best for Bodie if he stayed with us for a while, which of course we will also like.

To get him we each made the approximately three-hour drive to Asheville, NC and met for lunch at an interesting little place called HomeGrown  which is a converted old house.  I borrowed some of the pics from the web.

Homemade Dogfood And Almost Bald

Our dogs are getting fussy about their normal food of a little chopped chicken mixed with kibble and I had seen a spot on TV espousing the benefits of homemade food over store bought kibble, so I made up a batch using this recipe.

Our Summertime RVing Saga And The Pups

It has been an unbelievably bad summer for us and RVing.  It all began as we were on our way to a club rally just east of Asheville, NC where I was the rally master.  We were about 60 miles into the trip on I-40 E. when we got a low coolant alarm and fortunately, we were at an exit where we could add coolant.  We got back on the road and went about two miles when the engine began coughing and blowing out white smoke.

Once-In-A-Lifetime, Delicious Vegetable Beef Soup & Pups Ancestry

Be sure to read the verdict below.

Bev loves to have vegetable soup when it’s cold so with temps in the low 40's, it was on the menu for our Friday get together.  When she went to the store, I asked Bev to get a four-pound chuck roast but somehow she ended up with a 1½ lb. London broil (we’re old you know).  Since that was not enough meat for our soup recipe, she went freezer diving and came up with a 2¼ lb. chuck roast that we had marinated some time ago and the only beef broth she found was a quart of 2012 brisket broth.  I did a taste test and it was still fine.  I used the go-to soup recipe that I had developed recently but adjusted for what we had.

Chicken Stir Fry, Snow, and Capt. Romeo

I’m back to eating healthier with very low carbs so a chicken stir-fry dish seemed to fit the bill well but before I get into the food let’s look at the weather.  It was 76F on New Years Day and we awoke on Jan 3 to this.

A Visit From The Walkers

The whole Walker clan came in for a weekend visit and this is the first time in at least a year they’ve all been here.  Of course, one of our high priorities was providing meals using this plan.

Fri. Evening – Fried okra, boiled corn, and green beans (as I made them recently).
Sat. Morning – Sausage and pancakes with choice of blueberries, banana, and chopped pecans (it was all three for us smart ones).
Sat. Evening – Million Dollar Spaghetti Pie
Sun Lunch – BLT with Benton’s bacon and delicious local tomatoes.

I thought sure that I had blogged about making the spaghetti pie but could not find it anywhere so here it is (again).  The Million Dollar Spaghetti Pie recipe is from Spend With Pennies – I followed the ingredients list (except the butter) but assembled it differently.  Check out Holly’s blog for the original recipe and some great how-to shots – here is one of her shots and mine looked the same except I don't like the cheese to be this brown so I added it toward the end of cooking.

Wine Club BBQ

Over the past year or so, our wine club seems to have morphed into a supper club with wine playing a very diminished role and the entrée, provided by the hosts, becoming the star of the evening.  Since I haven’t cooked BBQ in a while, we decided it would make a good entrée and theme, but it is beyond hard to come up with your wine pairing for the BBQ.

We provided ABT’s (stuffed jalapenos) as an appetizer, slaw as a side, and pulled pork, ribs, and brisket as the entrée.

Dogs At Play

While Cindy now lives with us, she continues in her job as house/pet sitter and recently brought one of her charges over here to meet our pups.  He is a really big Golden Doodle named Barley and is roughly middle aged so still playful.

After a period of adjustment to the new dog, it was playtime and Pat’s dog, Frankie, who believes everything on the planet is a toy for him was soon on the attack, trying to jump up to Barley’s face and do what dogs usually do mouth-to-mouth, but he was just too short.

The Family Is Complete Again

After the loss of Coco back in November, I really wanted to be dog-less for awhile but Bev was having none of it and she spent a large part of each day online looking at dogs.  As I reported earlier, we got Romeo in December via someone who had found a stray and I hoped this would satisfy Bev but he did not seem to meet all of her needs and the search continued.

Last week on Craigslist she found a dog that needed a home as the owners could not take it into a new rental home and she fell in love with the picture and told the owners that he was just what she was looking for.  We got Teddy on Jan 22 and he is a mix of Maltese and something that could be poodle and he looks like a smaller, brown version of Bodie
(Madison’s dog who lived with us).

He got his first grooming and cleaned up great.  He is friendly, loving, and gets along well with Romeo and Frankie (Pat’s dog).  So I think the family is now complete and we’ll be about helping them settle in and learn how to live out here in the country.  Here are a few more shots of the three of them playing.

One of Bev's justifications for a second dog was so that Romeo would have a playmate and boy was she successful - Teddy is about all the other two can handle.

Have a great day and thanks for stopping by Almost Heaven South.

RIP Sweetie Pie

My second best friend and perhaps the best dog ever died suddenly on Tuesday after 13 years.  She lived a good life, was a great companion and gave us unconditional love - we will miss her so.  She seemed to enjoy the things we did, whether it be playing at the lake, playing in the snow, traveling, or just hanging around the house, but mostly I think she just like being with us.

Kitty, South Carolina, And A Rail Or Two

As you likely know, we have a cat, Kitty, whose job it is to keep the house free of mice and she is very good at it.  On this day, she sat on a chessboard without moving a man and peered out the window as though she was looking for her next victim.  She is wearing her pretty winter coat.

2013 Western Trip – Glacier NP

Warning: Long post ahead, but it is mostly photos.

As a kid in the 50’s, my best friend’s father was a railroad engineer and his family got to travel for a greatly reduced rate on the train.  Each summer they would take a long vacation to the West and he would tell me of the wonders he had seen, creating a great envy in me.

I finally saw the Grand Canyon a few years ago, on this day I drove the Going-To-The-Sun Road, and we’re heading to Yellowstone next.  As an engineer, I gazed in awe at what it must have taken to build the road in the 20’s – here’s a shot lifted from Wikipedia.

Our visit to the park was just a drive along the famous road from west to east and it began along the pretty Lake McDonald.

Just above the lake one of the prongs of the Flathead River runs along the road.

The mountains are very steep and craggy and the views of them and the valleys would have been breath-taking had it not been for the haze in the air.  We also noticed many dead trees, some of which was fire damage but not sure about the other.

On the east end of the road was the other pretty Lake St. Mary.

After leaving the park, we drove back to our area via the southern route and saw some interesting terrain while on a small MT route, reminding me of Dolly Sods in WV.

We stopped in East Glacier Park to pick up something to eat at Brownies Hostel-Bakery-Deli.

We got a chuckle from the signs on the business next door – “World’s Largest Wooden Spoon Shop” and “Hard Carved Stuff.”  We were in a hurry to get back to Whitefish so we didn’t go in.

We then got on US-2 and followed it through the valley around the park bottom and beside the railroad track which was also a great piece of engineering and construction (orig. – Burlington Northern and now BNSF).

We decided to check out Whitefish for a potential shopping trip the next day and stumbled into a good sized farmers market, which the ladies explored while I minded the dogs across the street at the BNSF RR station and yard – didn’t get to see the museum though.

All-in-all a pretty good day I’d say, finished off watching Madison romp with Bodie.

Photos best if enlarged by clicking on them.

Have a great day and thanks for stopping by Almost Heaven South.

Picnic At The Lake With The Kids

One of the traditional activities when Kathy comes to visit is a picnic in the Smokies where we grill burgers and fry potatoes in the cast Iron dutch oven and the kids play in the creek.  It’s a fun time but a big effort to prep and haul everything up to Cades Cove.

Fortunately, the kids are older now and preferred another day on the lake but we prepared the same meal – it’s just a lot easier to take it to the lake with a fridge and grill than to the mountains.  Eric decided he still needed a mountain fix though and took a little trip up to Look Rock by himself.

Potatoes fried up crispy in cast iron are hard to beat.  Seasoned with S&P and Montreal Steak Seasoning and covered for about the first 15 minutes to soften up a little.

Eric gave me a few camera lessons and then took several shots while I went off to cook.

Sofia and Eric ready to pull the others on the tube - I took this one.

Kathy giving the very intent Lauren driving lessons.

Fun in the water for Sofia, Lauren, Jennafer, and Matthew.

Katelynn and Matthew.

The way a kids face is supposed to look at the lake.

Sofia the towel model.

Sweetie says ho-hum to it all and finds herself a quiet place to hang out, but Eric found her.

The families are Kathy, Katelynn, Jennafer, and Lauren Roden from the San Antonio, TX area and Eric, Ann, Matthew, and Sofia Doolittle from the Baltimore area - Madison wasn't feeling well and stayed at the house.

The food was good, the weather was good, the water was good, the water toys worked, and the neighbors came down about eight with homemade ice cream - what could be better than that.

Photos best if enlarged by clicking on them.

Have a great day and thanks for stopping by Almost Heaven South.
