I'd like to thank my air fryer oven

Happy Saturday everyone! Yesterday, we surprised our Supervisor, Patricio, with a Birthday Party. We all brought in homemade food, drinks, and presented him with a birthday card from all of us! ...

Patricio is the third person in from the top (I am standing next to him on the left, second in).
Me and my co-workers.
Patricio's birthday IS actually on St. Patrick's Day hence  his birthday cake (top photo). The bottom cake was baked by one of my co-workers who also has a cake decorating business ...

My co-workers LOVE my homemade cupcakes that I bake in my air fryer oven and so I made 48 of them - 24 red velvet and 24 confetti ...

Their only complaint? I did not make enough of them! SO I promised I would bake some more sometime this coming week. 😍

Weekend happenings

Happy Saturday everyone! I hope you all had a good week. Mine was crazy, but I got through it thank Goddess! At any rate, I was fortunate enough to enjoy a lunch date with my long-time friend Kiki (my goddaughter's grandmother) on Friday before I had to go to work ...

We met at Ganly's Irish Pub where we had a delicious meal - I had the PA Dutch Chicken Potpie ....

And Kiki enjoyed Ruben Empanadas with a Caesar salad

We also had an early Valentine's Day feast at work. Each co-worker brought a little something for all to eat and drink ...

I decided to bake some Red Velvet cupcakes with M&M Strawberry Shake flavored candy on top! ...

Tonight for dinner, I tried out a new recipe - Teriyaki Hamburgers made in the Air Fryer Oven. They are quick and easy to make and my husband loved them! ...

All you need is:
1 pound lean ground beef
1/2 cup plain dry bread crumbs (optional)
1/4 cup reduced-sodium ketchup
2 tablespoons reduced-sodium teriyaki sauce
1/2 teaspoon black pepper
6 Kaiser rolls or hamburger buns, warmed
4 leaves green leaf lettuce
4 slices tomato

1) Combine beef, bread crumbs, ketchup, teriyaki sauce, and pepper in a large bowl; mix well. Shape beef into four 1/2 inch thick patties.

2) Preheat air fryer to 370 degrees Fahrenheit.

3) Cook in batches 8 to 10 minutes, turning halfway through cooking, until desired doneness. Place patties on rolls and serve with lettuce and tomato.

Tonight, I am going to bake a few strawberry cupcakes in the air fryer oven per my mom's request.

Have a great weekend all!

Crockpot Pot Roast

This weekend, I tried a new slow cook recipe for Pot Roast in the crockpot. Since my husband was diagnosed with diabetes, I have been trying my best to cook homemade meals in order to keep his glucose levels down. It was a recipe he found on the internet. It is simple!

All you need is a crockpot, a bag of small potatoes, a small pack of raw mixed veggies (green pepper, onions, carrots, etc.), 2 packs of DRY onion soup mix, 2 1/2 to three pounds of roast beef, and four cups of water ...

Wash/rinse and dice the potatoes in quarters then place in the crockpot along with the mixed raw veggies ...

Cut up the roast beef in small cubes ...

Add the potatoes and veggies then add the two dry packs of onion soup ...

Cook on low temperature for 6 to 8 hours or as long as needed.

Leftovers!

Happy Sunday!

Greetings all. It has been another hot, humid weekend, but the good news is that we were able to get the AC back on Friday morning! YAY!!! Hopefully, it will get us through the rest of the summer!

I just wanted to share a new limited item that I picked up Stinkleberry Soap Company today. It is a large Gumdrop Bath Bomb with a small clear cube inside of it which changes pretty colors. The hot water dissolves and activates the cube ...
