Abstract
Description
図1は、本発明の実施形態に係るだし抽出用装置1、及びタンク2の外観図である。図2は、実施形態に係るだし抽出用装置1の垂直断面図である。図3は、だし抽出用装置1が連結されるタンク2の垂直断面図である。
以下、本実施形態に係るだし抽出用装置1を用いただし汁の抜出し及び残渣の排出方法の一例について説明する。
上記実施形態によれば、外部に露出しない環境で自動的に大量のだし汁の抜出し及び残渣の排出を行うことができるため、経済的、衛生的、かつ安全にだしを生産することができる。つまり、前述した課題を解決することができる。また、上記実施形態に係るだし抽出用装置は、人力による作業を必要としないため、コンピュータを用いた自動制御等の総合生産方式による完全自動化を行うことができる。

- だし抽出用の材料及び水を収容するタンクの底部に連結される、前記材料から抽出されるだしが前記水に溶け出しただし汁を抜出すだし汁抜出部と前記材料の残渣を排出する残渣排出部とを備えただし抽出用装置であって、
前記だし汁抜出部は、
前記タンクの底部に連結される、だし抽出の過程において前記タンクから前記だし汁及び前記残渣が流入する管状の本体と、
前記管状の本体の内部に設置されたスクリューコンベアと、
前記管状の本体に設けられた、前記管状の本体内の前記だし汁を抜出すためのだし汁抜出口と、を含み、
前記残渣排出部は、
前記スクリューコンベアと、
前記管状の本体に設けられた、前記残渣を排出するための残渣排出口と、を含む、だし抽出用装置。 - 前記だし汁抜出口の鉛直方向の位置が、前記スクリューコンベアの羽根の上端の鉛直方向の位置と下端の鉛直方向の位置の間にある、請求項1に記載のだし抽出用装置。
- 前記残渣排出口は、前記管状の本体の前記タンクの反対側の端部に設けられた、開閉可能な蓋を有する開口部である、請求項1又は2に記載のだし抽出用装置。

- 前記管状の本体の表面を覆う蒸気ジャケットを有する、請求項7又は8に記載のだし抽出用装置。
- 前記邪魔板の上端の鉛直方向の位置が、前記管状の本体の上端の開口部の鉛直方向の位置と同じ、又は前記開口部の鉛直方向の位置よりも高い、請求項7~9のいずれか1項に記載のだし抽出用装置。
- だし抽出用の材料からだしを抽出し、前記だしが水に溶け出しただし汁を抜出すとともに、前記材料の残渣を排出するだし抽出方法であって、
タンク内に収納された前記材料から前記だしを抽出する工程と、
前記タンクの底部に連結された管状の本体に取付けられただし汁抜出口から前記だし汁を抜出す工程と、
前記だし汁を抜出した後、前記管状の本体の内部に設置されたスクリューコンベアを回転させることにより、前記管状の本体内に堆積した前記残渣を前記管状の本体内で搬送し、前記管状の本体の残渣排出口から排出する工程と、を含む、だし抽出方法。 - 前記残渣が堆積した前記管状の本体内における前記スクリューコンベアの羽根の下の空間を通して前記だし汁を前記だし汁抜出口から抜出す、請求項11に記載のだし抽出方法。
- 前記だしの抽出過程及び前記だし汁の抜出し過程において、前記管状の本体を加熱する、請求項11又は12に記載のだし抽出方法。
- 前記だしの抽出過程において前記タンクの内部を密閉することにより、前記タンク内の水から発生した水蒸気を前記タンク内で圧縮し、前記水蒸気の圧力により、前記だしの抽出を促進する、請求項11~13のいずれか1項に記載のだし抽出方法。
