Abstract
La présente invention concerne l’utilisation d’une alpha-amylase amyTS-23 parente ainsi que des variants, lesdits variants ayant une activité d’alpha-amylase et présentant des propriétés modifiées par rapport à l’alpha-amylase parent dans la production de produits alimentaires, telle que l’utilisation dans une composition de cuisson au four.
