Abstract

The invention concerns a soft drink based on Indian gooseberry extract and a process of production thereof comprising the following steps: - washing and drying of fresh Indian gooseberries, - cutting the berries into small pieces and further drying for a couple of weeks, - extracting the dried berries with water, - filtering, boiling and pasteurizing the extract, - adding sugar or sweeteners and preservatives, - treating with UV-light and filtering, - carbonating, and - packaging of the resulting soft drink.
