Abstract

L'invention concerne l'industrie alimentaire et plus particulièrement un procédé pour peler les fruits. Selon l'invention, on placer les fruits à peler dans un récipient refermable hermétiquement et capable de fonctionner à température élevée. Le récipient est refermé hermétiquement puis la pression est portée à une valeur nécessaire du point de vue de la technologie du processus. Les fruits sont retenus sous pression, après quoi on provoque une chute de pression brutale dans le récipient. L'invention permet d'assurer une qualité élevée de pelage de fruits, une quantité minimale de déchets, une grande productivité du processus et son efficacité élevée en termes de coûts, et la possibilité de l'utiliser dans des entreprises à grande échelle tout comme dans le ménage.
