Abstract

L'invention concerne un additif biologiquement actif pour aliments et autres préparations pharmaceutiques et cosmétiques. L'additif selon l'invention contient un milieu hydrolysé d'origine animale et/ou végétale, des cultures journalières de micro-organismes, des adjuvants stabilisateurs, dans les proportions suivantes: de 1,0 à 7,0 % par volume de culture de micro-organismes; au moins 0,59 % d'adjuvants stabilisateurs (selon les concentrations suivantes: de 0,8 à 2,0 g/l d'agar-agar; de 2,0 à 5,0 g/l de chlorure de sodium; de 2,5 à 15,0 g/l de peptone; de 0,15 à 0,5 g/l de cystine ou de cystéine chlorhydrique; de 0,3 à 0,5 g/l d'acide ascorbique; de 0,15 à 15,0 g/l de lactulose ou de lactose); au moins 78 % d'hydrolysat. L'invention concerne également un procédé de production d'additif biologiquement actif. Ce procédé consiste à préparer un milieu hydrolysé à partir d'un hydrolysat de composant protéique d'origine animale ou végétale, notamment par l'intermédiaire d'une hydrolyse par fermentation. Cette hydrolyse est réalisée en deux étapes, une étape étant mise en oeuvre dans un milieu acide au moyen de pepsine, l'autre étape étant mise en oeuvre dans un milieu alcalin au moyen de pancréatine. Le procédé selon l'invention consiste également à ajouter de l'acide chlorhydrique ou acétique, à réaliser une ébullition, une filtration, une dilution, à ajouter au milieu hydrolysé des adjuvants stabilisateurs en quantité supérieure ou égale à 0,59 % par volume, à stériliser ledit milieu, et à ajouter les cultures journalières de micro-organismes ainsi que leur production. Le nouvel additif biologiquement actif selon l'invention présente une durée de conservation accrue. Le procédé de production dudit additif permet d'augmenter le rendement de l'hydrolysat.
