Abstract

Méthode servant à couper des produits alimentaires et utilisant la résonnance magnétique nucléaire ou des rayons X pour détecter et analyser le produit alimentaire. La distribution de divers types de tissus dans le produit est déterminée sur la base de l'information de signaux obtenue au moyen de la détection. Les positions de coupes souhaitables dans le produit sont déterminées sur la base de la distribution des types de tissus dans le produit et de l'objectif recherché par les coupes; les coupes s'effectuent ensuite dans les positions déterminées. Un dispositif servant à mettre en oeuvre ladite méthode comprend un équipement de détection (1), un appareil de traitement des signaux (4) et un appareil de coupe (5, 5').
