Abstract
Способ приготовления крекера, включающий приготовление эмульсии из соли, сахара, разрыхлителя, воды и жира, замес теста из приготовленной эмульсии, муки пшеничной хлебопекарной высшего сорта и пластификатора, разделку и выпечку тестовых заготовок, отличающийся тем, что в рецептурную смесь дополнительно вносят натуральный обогатитель сухой белковый полуфабрикат в количестве 5-7% к массе муки в тесте, причем перед замесом теста муку пшеничную хлебопекарную высшего сорта и сухой белковый полуфабрикат предварительно смешивают, при этом сухой белковый полуфабрикат выполняет функцию пластификатора.A method of preparing a cracker, including the preparation of an emulsion from salt, sugar, baking powder, water and fat, kneading dough from the prepared emulsion, premium wheat flour and plasticizer, cutting and baking dough pieces, characterized in that a dry natural enrichment agent is additionally added to the recipe mixture prefabricated protein in the amount of 5-7% by weight of flour in the dough, moreover, before kneading the dough, premium wheat flour and dry pre-mixed protein are pre-mixed, while dry th prefabricated protein acts as a plasticizer.
